parsnip, lentil and walnut salad

How to make parsnip, lentil and walnut salad recipe -  Calories per serving 435

Serves 4

Preparation time 10 minutes, Cooking time 30–35 minutes

Ingredients:
4 parsnips, peeled and cut into batons
4 tablespoons olive oil
30 g (1 oz) walnuts
750 ml (1¼ pints) gluten-free vegetable stock
200 g (7 oz) Puy lentils
juice of ½ lemon
1 teaspoon clear honey
½ teaspoon gluten-free wholegrain mustard
½ garlic clove, crushed
25 g (1 oz) watercress
25 g (1 oz) rocket leaves
25 g (1 oz) baby spinach leaves
20 g (¾ oz) Parmesan cheese shavings

Method:
Place the parsnips in a roasting tin and drizzle with 1 tablespoon of the oil. Roast in a preheated oven, 200°C (400°F), Gas Mark 6, for 30–35 minutes until golden, adding the walnuts 5 minutes before the end of the cooking time.

Meanwhile, bring the stock to the boil in a saucepan, add the lentils and cook for 25–30 minutes until the lentils are just tender. Drain.

Whisk together the remaining oil, lemon juice, honey, mustard and garlic in a small bowl.

Transfer the lentils, walnuts and parsnips to a serving bowl, then toss together with the dressing and salad leaves. Serve topped with Parmesan shavings.

For curried parsnip & lentil soup, heat 1 tablespoon olive oil in a saucepan, add 3 peeled and chopped parsnips and cook for 2–3 minutes. Stir in 1 teaspoon curry powder and 50 g (2 oz) red lentils and cook for 1 minute, then stir in 900 ml (1½ pints) gluten-free vegetable stock. Simmer for 20–25 minutes until the parsnips are tender. Remove from the heat and blend with a hand-hand blender, adding a little milk to loosen if needed. Ladle into 4 bowls and serve sprinkled with 1 tablespoon chopped toasted walnuts and ½ tablespoon grated Parmesan cheese. Calories per serving 198

Ingredients:
500 g (1 lb) butternut squash, peeled, deseeded and cut into 1 cm (½ inch)
cubes
3 tablespoons olive oil

1 head of broccoli, cut into florets
200 g (7 oz) frozen or fresh peas
3 tablespoons quinoa
3 tablespoons mixed seeds
2 smoked mackerel fillets
juice of 1 lemon
½ teaspoon clear honey
½ teaspoon gluten-free Dijon mustard
100 g (3½ oz) red cabbage, shredded
4 tomatoes, chopped
4 ready-cooked fresh beetroots, cut into wedges
20 g (¾ oz) radish sprouts

Method:
Place the squash in a roasting tin and sprinkle with 1 tablespoon of the oil and the cumin seeds. Place in a preheated oven, 200°C (400°F), Gas Mark 6, for 15–18 minutes until tender. Leave to cool slightly.

Meanwhile, cook the broccoli in a saucepan of boiling water for 4–5 minutes until tender, adding the peas 3 minutes before the end of the cooking time. Remove with a slotted spoon and refresh under cold running water, then drain. Cook the quinoa in the broccoli water for 15 minutes, or according to the packet instructions, then drain and leave to cool slightly.

Heat a nonstick frying pan over a medium-low heat and dry-fry the seeds, stirring frequently, until golden brown. Set aside. Heat the mackerel fillets according to the packet instructions, then skin and break into flakes.

Whisk together the remaining oil, lemon juice, honey and mustard in a small bowl. Toss together all the ingredients, except the radish sprouts, with the dressing in a serving bowl. Serve topped with the sprouts.

For smoked mackerel superfood soup, heat 1 tablespoon oil in a saucepan and fry 1 chopped onion and 1 crushed garlic clove for 3–4 minutes. Add 625 g (1¼ lb) peeled, deseeded and diced butternut squash, 100 g (3½ oz) broccoli florets, 2 tablespoons quinoa, 600 ml (1 pint) gluten-free vegetable stock and 150 ml (¼ pint) orange juice and simmer for 15 minutes. Blend until smooth. Stir in 2
skinned, flaked smoked mackerel fillets and cook for 1 minute. Serve sprinkled with 2 tablespoons toasted pumpkin seeds. Calories per serving 416

Whisk together the pesto or tomato paste and balsamic vinegar in a small bowl. Place the roasted vegetables, rocket and quinoa in a large serving bowl and stir in the dressing. Serve warm.

For quinoa with salmon & watercress, cook the quinoa as for Roasted veggie & quinoa salad. Meanwhile, place 2 large pieces of skinless salmon fillet, about 300g (10 oz) in total, in a nonstick frying pan and cook for 3 minutes on each side until crisp and just cooked through, then flake. Whisk together 200 g (7 oz) light crème fraîche, the grated rind and juice of 1 orange and 1 tablespoon gluten-free wholegrain mustard in a small bowl. 1 large courgette, grated

2 tbsp good-quality mayonnaise
2 tsp lemon juice
1 tbsp finely chopped basil leaves
salt and freshly ground black pepper

Method:
1 Preheat the broiler on its highest setting. To make the lemon and basil mayo, mix together the mayonnaise, lemon juice, and basil. Season well and set aside.

2 Preheat a grill pan or a large, cast-iron frying pan. While it is heating, broil the bacon under the broiler for 2–3 minutes on each side until crispy. Drain on paper towels and keep warm.

3 Spread a little butter on both sides of the bread slices and grill them in the pan for 2 minutes on each side, until nicely toasted.

4 Remove the bread slices from the heat. Spread one side of the toast with a little of the mayonnaise, then top it with the lettuce, fried green tomatoes, and the bacon. Finish with a final layer of mayonnaise and top with the second piece of bread. Cut in half to serve.

Ingredients:
1/2 cup (100 g) long-grain white rice
1/2 pound (250 g) lean ground lamb
1 onion, chopped
4 peppers, mixed colors
4 large beef tomatoes
2 large zucchini
1 tablespoon (15 ml) extra virgin olive oil
3 cloves garlic, crushed
4 cups (180 g) baby spinach leaves
2 tablespoons (30 ml) shredded fresh basil, plus 2 tablespoons (30 ml) extra, to serve
1 egg, lightly beaten
freshly ground black pepper

Method:
1 Put the rice in a saucepan with 2 cups (500 ml) water and bring to a boil. Reduce the heat to low and simmer, stirring often, for 15 minutes, or until tender. Drain well, and put into a large bowl and set aside.

2 Meanwhile, cook the lamb and onion in a nonstick frying pan over medium–high heat, stirring frequently, until the lamb is lightly browned and cooked through. Place a sieve over a bowl and put in the meat and onions. The fat will drip through and can be discarded. Clean the pan and return it to the stovetop.

3 Cut each pepper in half lengthwise, keeping the stems intact, and remove the seeds and membranes. Cut the tops off the tomatoes and hollow them out, chop the tops and tomato flesh and place in a bowl. Cut the zucchini in half lengthwise and hollow out the centers, leaving 1/4 inch (0.5 cm) thick shells, chop the zucchini flesh and add it to the bowl with the tomato.

4 Preheat the oven to 350°F (180°C). Heat the oil in the frying pan over medium heat. Add the garlic, diced tomatoes and zucchini and cook until they soften. Add the spinach and cook until wilted. Transfer the tomato mixture to the bowl with the rice, and add the lamb, basil and egg. Season with pepper and stir to combine.

5 Spoon the stuffing into the vegetable shells. Arrange the peppers and zucchini in a single layer in a deep roasting pan. Cover with foil and roast for 15 minutes. Add the tomatoes and roast for another 15 minutes, or until the vegetables are almost tender. Remove the foil and roast for another 15–20 minutes, or until the vegetables are tender and the tops are lightly browned. Serve warm or cool, sprinkled with the extra basil.

Ingredients:
1 1/3 pounds (700 g) potatoes, peeled, quartered lengthwise and thinly sliced crosswise
1 red pepper, seeded and chopped
2 tablespoons (30 ml) extra virgin olive oil
1 onion, halved and thinly sliced
1 cup (250 g) frozen corn, thawed
6 eggs
1/3 cup (10 g) finely chopped fresh flat-leaf parsley
pinch of salt
freshly ground black pepper

Method:
1 Put the potatoes in a saucepan, cover with boiling water and return to a boil. Reduce the heat to low, add the pepper and simmer for 3 minutes, or until the potatoes are just starting to soften. Drain well, cover and keep hot.

2 Meanwhile, heat a 10 inch (25 cm) nonstick frying pan over high heat. Add the oil to the pan and swirl it around. When the oil is hot, reduce the heat to medium, add the onion and cook, stirring, for 3 minutes, or until soft.

3 Add the potatoes, pepper and corn and cook for another 8 minutes, stirring and turning the vegetables, until the potatoes are tender. Remove from the heat.

4 Put the eggs in a large bowl and beat with a fork to combine. Add the parsley and season with salt and pepper. Using a slotted spoon, remove the vegetables from the pan and add them to the eggs, mixing thoroughly.

5 Return the pan to the stove with any oil that remains from cooking the vegetables. If there are any vegetables stuck on the bottom of the pan, clean and dry it before reheating with 1 tablespoon (15 ml) oil. Heat the pan over medium heat, add the egg mixture, and distribute the vegetables evenly. Cook the frittata, shaking the pan frequently, for 3–4 minutes, or until the edges are set and the top is beginning to look set.

6 Meanwhile, preheat the broiler to high. Place the frittata under the broiler for 2 minutes, or until the eggs are just set pierce the top with a knife to check that it’s cooked.

7 Remove the pan from the broiler and let it sit for 2 minutes, then slide the frittata onto a serving plate. Serve hot or at room temperature, cut into wedges.

Method:
1 Combine the chickpeas, lime zest and juice, sugar, garam masala, cinnamon and oregano in a bowl. Stir to coat the chickpeas in the spicy mixture. Set aside while preparing the rest of the dish.

2 Heat the oil in a large frying pan or wok over medium heat, add the onions and stir-fry for 4 minutes, or until just beginning to color. Reduce the heat and add the peppers. Cook for another 3–4 minutes, stirring occasionally, until the vegetables are almost tender.

3 Stir in the tomatoes, and add the chickpea mixture. Cook for 2 minutes, or until the vegetables are tender and everything is hot.

4 Transfer the chickpeas and vegetable mixture to a large bowl. If you like, serve with tortillas, sour cream and a squeeze of lime juice.

Method:
1 Put the lentils in a saucepan with the bay leaf and strip of citrus zest. Cover the lentils with plenty of cold water. Bring to a boil, reduce heat and simmer gently for 15–20 minutes, until the lentils are tender but still firm to the bite. Drain thoroughly and discard the bay leaf and citrus zest. Transfer the lentils to a large mixing bowl.

2 Combine the vinegar, red currants and honey in a small saucepan and add 3 tablespoons (45 ml) water. Bring to a boil and cook for a few seconds; remove from the heat. Scoop out the red currants with a slotted spoon and add to the bowl with the lentils.

3 Whisk the sunflower and hazelnut oils into the red currant juices in the saucepan, and season with salt and pepper. Drizzle the dressing over the lentils and red currants.

4 Add the peaches to the bowl, toss together very gently, taking care not to break up the currants and peaches.

5 Arrange the salad leaves on a serving plate. Top with the peach and lentil salad and serve at room temperature.

2 Meanwhile, heat the oil in a large nonstick frying pan over medium heat. Add the onion and cook for about 4 minutes, or until lightly browned. Add the stock, asparagus and peas and cook for 5 minutes, or until just tender.

3 Add the quinoa and stir to mix well. Serve immediately with the lemon wedges on the side.

2 Arrange the vegetables on a broiler pan in a single layer, positioning the peppers skin sides down. Brush with the oil and broil, on one side only, until lightly browned but still slightly firm. If necessary, cook the vegetables in batches and keep the first batch warm in the oven.

3 Meanwhile, peel and halve the cloves of garlic and halve the tomato. Toast the slices of bread on both sides.

4 Rub the top of each bread slice with the cut garlic and tomato, and pile the grilled vegetables on top. Drizzle the remaining oil over the vegetables and season to taste with pepper. Scatter the basil leaves on top and serve while still warm.

4 Cook in the oven for 30–40 minutes or until tender and starting to char. Sprinkle with balsamic vinegar.

5 Meanwhile, make the mustard mayonnaise. Blend together the mayonnaise and mustard in a bowl.

6 Transfer the roasted vegetables to a serving dish and serve hot or cold with the mustard mayonnaise.
