CARAMELIZED ONION FOCCACIA

Total Time Taken: 1 ½ hours
Yield: 8 Servings

Ingredients:
¼ cup canola oil
¼ teaspoon salt
½ teaspoon dried thyme
½ teaspoon instant yeast
1 cup warm water
2 cups all-purpose flour
2 red onions, sliced
2 tablespoons olive oil

Directions:
1. Heat the oil in a deep cooking pan. Put in the onions and cook for
about ten minutes or until caramelized, golden brown.

2. Put in the thyme and turn off the heat.

3. Mix the water, yeast and oil in a container. Allow to rest for five
minutes then mix in the remaining ingredients.

4. Stir thoroughly to mix then knead the dough for about ten minutes
or until elastic and easy to work with.

5. Let the dough rest for about ten minutes then roll it into a slim
sheet.

6. Put the dough on a baking tray and top it with the caramelized
onions.

7. Pre-heat the oven and bake at 350F for about twenty minutes.

8. Let cool down before you serve.
