RUM BANANA BREAD

Total Time Taken: 1 hour
Yield: 10 Servings

Ingredients:
Bread:
¼ cup dark rum
½ cup butter, softened
½ cup shredded coconut
½ cup sour cream
½ teaspoon salt
1 cup white sugar
2 bananas, mashed
2 cups all-purpose flour
2 eggs
2 teaspoons baking powder

Glaze:
1 ½ cups powdered sugar
2 tablespoons dark rum

Directions:
1. For the bread, combine the butter and sugar in a container until
creamy.

2. Put in the eggs, one at a time, then mix in the bananas, sour cream
and rum.

3. Put in the remaining ingredients and mix using a spatula.

4. Spoon the batter in a loaf pan coated with baking paper.

5. Pre-heat the oven and bake at 350F for about forty minutes or until
the bread looks golden-brown and it rises significantly.

6. Let cool in the pan then move to a platter.

7. To make the glaze, combine the ingredients in a container.

8. Sprinkle the glaze over the bread and serve it fresh.
