IRISH DRIED FRUIT BREAD

Total Time Taken: 3 hours
Yield: 14 Servings

Ingredients:
¼ cup light brown sugar
½ cup butter, melted
½ cup dried cranberries
½ cup raisins
½ cup sultanas
½ teaspoon ground ginger
½ teaspoon ground star anise
½ teaspoon salt
1 teaspoon cinnamon powder
2 cups brewed black tea
2 eggs
2 tablespoons Irish whiskey
2 teaspoons instant yeast
4 cups all-purpose flour

Directions:
1. Mix the raisins, sultanas, cranberries, black tea, whiskey, sugar,
eggs and butter in a container.

2. Put in the remaining ingredients and mix thoroughly. Knead the
dough for about ten minutes or until it gets easy to work with.

3. Let the dough rise for about ninety minutes then move it to a floured
working surface and cut it in half. Roll each half into a loaf and
place them in baking trays covered with parchment paper.

4. Bake the breads in the preheated oven at 350F for around forty
minutes or until it rises significantly and starts to appear goldenbrown.

5. Let cool in the pan then serve.
