PEAR CARROT BREAD

Yield: 10 Servings

Ingredients:
1 cup whole wheat flour
¼ teaspoon salt
2 teaspoons baking powder
½ teaspoon cinnamon powder
½ teaspoon ground ginger
½ teaspoon ground cardamom
½ cup light brown sugar
1 egg
1 cup plain yogurt
¼ cup canola oil 2 carrots, grated
2 pears, peeled, cored and diced
3/4 cup all-purpose flour

Directions:
1. Mix the flours, salt, baking powder, spices and sugar in a container.

2. Put in the egg, yogurt and oil and mix thoroughly using a whisk.

3. Fold in the carrot and pears then spoon the batter in a loaf pan
coated with baking paper.

4. Pre-heat the oven and bake at 350F for forty minutes or until the
bread passes the toothpick test.

5. Let cool in the pan then serve, sliced.
