parsnip, lentil and walnut salad

How to make parsnip, lentil and walnut salad recipe -  Calories per serving 435

Serves 4

Preparation time 10 minutes, Cooking time 30–35 minutes

Ingredients:
4 parsnips, peeled and cut into batons
4 tablespoons olive oil
30 g (1 oz) walnuts
750 ml (1¼ pints) gluten-free vegetable stock
200 g (7 oz) Puy lentils
juice of ½ lemon
1 teaspoon clear honey
½ teaspoon gluten-free wholegrain mustard
½ garlic clove, crushed
25 g (1 oz) watercress
25 g (1 oz) rocket leaves
25 g (1 oz) baby spinach leaves
20 g (¾ oz) Parmesan cheese shavings

Method:
Place the parsnips in a roasting tin and drizzle with 1 tablespoon of the oil. Roast in a preheated oven, 200°C (400°F), Gas Mark 6, for 30–35 minutes until golden, adding the walnuts 5 minutes before the end of the cooking time.

Meanwhile, bring the stock to the boil in a saucepan, add the lentils and cook for 25–30 minutes until the lentils are just tender. Drain.

Whisk together the remaining oil, lemon juice, honey, mustard and garlic in a small bowl.

Transfer the lentils, walnuts and parsnips to a serving bowl, then toss together with the dressing and salad leaves. Serve topped with Parmesan shavings.

For curried parsnip & lentil soup, heat 1 tablespoon olive oil in a saucepan, add 3 peeled and chopped parsnips and cook for 2–3 minutes. Stir in 1 teaspoon curry powder and 50 g (2 oz) red lentils and cook for 1 minute, then stir in 900 ml (1½ pints) gluten-free vegetable stock. Simmer for 20–25 minutes until the parsnips are tender. Remove from the heat and blend with a hand-hand blender, adding a little milk to loosen if needed. Ladle into 4 bowls and serve sprinkled with 1 tablespoon chopped toasted walnuts and ½ tablespoon grated Parmesan cheese. Calories per serving 198

Ingredients:
500 g (1 lb) butternut squash, peeled, deseeded and cut into 1 cm (½ inch)
cubes
3 tablespoons olive oil
1 teaspoon cumin seeds
1 head of broccoli, cut into florets
200 g (7 oz) frozen or fresh peas
3 tablespoons quinoa
3 tablespoons mixed seeds
2 smoked mackerel fillets
juice of 1 lemon
½ teaspoon clear honey
½ teaspoon gluten-free Dijon mustard
100 g (3½ oz) red cabbage, shredded
4 tomatoes, chopped
4 ready-cooked fresh beetroots, cut into wedges
20 g (¾ oz) radish sprouts

Method:
Place the squash in a roasting tin and sprinkle with 1 tablespoon of the oil and the cumin seeds. Place in a preheated oven, 200°C (400°F), Gas Mark 6, for 15–18 minutes until tender. Leave to cool slightly.

Meanwhile, cook the broccoli in a saucepan of boiling water for 4–5 minutes until tender, adding the peas 3 minutes before the end of the cooking time. Remove with a slotted spoon and refresh under cold running water, then drain. Cook the quinoa in the broccoli water for 15 minutes, or according to the packet instructions, then drain and leave to cool slightly.

Heat a nonstick frying pan over a medium-low heat and dry-fry the seeds, stirring frequently, until golden brown. Set aside. Heat the mackerel fillets according to the packet instructions, then skin and break into flakes.

Whisk together the remaining oil, lemon juice, honey and mustard in a small bowl. Toss together all the ingredients, except the radish sprouts, with the dressing in a serving bowl. Serve topped with the sprouts.

For smoked mackerel superfood soup, heat 1 tablespoon oil in a saucepan and fry 1 chopped onion and 1 crushed garlic clove for 3–4 minutes. Add 625 g (1¼ lb) peeled, deseeded and diced butternut squash, 100 g (3½ oz) broccoli florets, 2 tablespoons quinoa, 600 ml (1 pint) gluten-free vegetable stock and 150 ml (¼ pint) orange juice and simmer for 15 minutes. Blend until smooth. Stir in 2

Cook the rice noodles according to the packet instructions, then refresh under cold running water.

Segment the oranges over a bowl to catch the juice. Transfer the noodles to a large bowl, add the orange segments, prawns, watercress and onion and mix together.

Add the sweet chilli sauce and lime juice to the orange juice and whisk together. Pour over the noodle mixture and toss together.

Arrange the lettuce leaves on a large serving plate or 4 individual plates and top with the noodle salad. Sprinkle with the toasted sesame seeds and serve.

For prawn cocktail, mix together the grated rind of 1 orange, 4 tablespoons gluten-free mayonnaise and 1 tablespoon gluten-free tomato ketchup in a small bowl. 4 boneless, skinless chicken breasts, about 125 g (4 oz) each

Method:
Put the chicken breasts into a shallow non-metallic dish. Spoon three-quarters of the oil over the chicken, then add half the soy sauce, the garlic and ginger. Turn the chicken to coat in the mixture, cover with clingfilm and leave to marinate in the refrigerator for 30 minutes.

Heat a nonstick frying pan until hot. Lift the chicken out of the marinade, add to the pan and fry for 8–10 minutes on each side until dark brown and cooked through. Remove from the pan and set aside.

Heat the remaining oil in the pan, add the seeds and fry for 2–3 minutes until lightly toasted. Add the remaining marinade and remaining soy sauce and bring to the boil, then remove from the heat and mix in the lime juice.

Mix the herb salad, lettuce and sprouting seeds together, then divide on to 4 serving plates. Thinly slice the chicken and arrange on top. Spoon over the seed dressing and serve immediately.

For teriyaki chicken with oriental salad, marinate the chicken as for Teriyaki chicken salad and make a salad with 200 g (7 oz) carrots, cut into thin strips, 4 spring onions, cut into thin strips, 6 thinly sliced radishes and ½ small head of Chinese leaves, thinly shredded. Fry the chicken as for Teriyaki chicken salad, omit the seeds and then continue with the dressing as for Teriyaki chicken salad. Slice the chicken, arrange on the salad and drizzle with the warm dressing. Calories per serving 239

For nutty beef & bean salad, rub 450 g (14½ oz) rump steak with 1 tablespoon olive oil and sprinkle with 1 tablespoon pepper. Fry the steak for 1–2 minutes on each side in 1 tablespoon olive oil, then leave to rest. In a large bowl, toss together 40 g (1½ oz) lamb’s lettuce, 2 chopped ready-cooked fresh beetroots, 4 sliced spring onions, a rinsed and drained 400 g (13 oz) can butter beans, 12 halved baby plum tomatoes and 2 tablespoons toasted cashew nuts.

Whisk together 3 tablespoons extra virgin olive oil, 1 tablespoon balsamic vinegar, 1 crushed garlic clove, 1 teaspoon soft dark brown sugar and ½ teaspoon glutenfree wholegrain mustard in a bowl, then stir in 1 tablespoon roughly chopped peanuts. Ingredients:
1⁄2 cup mayonnaise

2 Hold the cabbage, cut-side down, on a chopping board and cut in half lengthwise, straight through the stalk. Slice out the core from each wedge and cut across the cabbage, creating broad or fine shreds. Transfer to a large bowl.

3 Add the other vegetables and mix well until the vegetables are well coated in the mayonnaise. Served chilled.

Ingredients:
21⁄4lb (1kg) potatoes, peeled

1 celery stalk, finely chopped

1 Cook the potatoes whole in a large pan of boiling salted water for 20–25 minutes until tender. Drain and set aside to cool. When cold, peel and cut the potatoes carefully into 1 1⁄4in (3cm) cubes.

2 In a bowl, mix together the mayonnaise, mustard, celery, scallions, capers, and lemon juice, and season well.

3 Place the potatoes into a large serving bowl and gently toss the mayonnaise mixture through the potatoes, being careful not to break them up.

1 tsp cayenne pepper

8 smoked bacon slices
1⁄2 cup all-purpose flour
1⁄2 cup breadcrumbs
1 tbsp chipotle paste
1 3⁄4 pints (1 liter) peanut or sunflower oil, for frying
bunch of baby spinach or arugula leaves
10oz (300g) cherry tomatoes, halved
1 avocado, pitted, peeled, and chopped
4 hard-boiled eggs, roughly chopped

For the blue cheese dressing:
2 tbsp mayonnaise
1⁄2 cup sour cream
1⁄3 cup buttermilk
1 cup blue cheese, crumbled
2 tbsp apple cider vinegar

Method:
1 Put the chicken in a pan along with the cayenne pepper and 1 tsp salt. Pour in the milk and leave the chicken to soak for 2 hours in the fridge.

2 In a frying pan, dry-fry the bacon over medium heat until crispy. Remove from the pan and cool on a wire rack, then set aside.

3 In a shallow bowl, mix together the flour, breadcrumbs, chipotle paste, and 1 tbsp salt. Drain and discard the milk and turn the chicken in the bread mixture until well coated.

4 Pour the oil into a large, heavy-based saucepan or deep-fat fryer. Heat it to 375ºF (190ºC). Fry the chicken for 5–7 minutes, or until golden brown. Remove with a slotted spoon and cool on a wire rack. Set aside.

5 Spread the spinach evenly in a large, wide serving dish. Place the tomatoes in a row across the greens. Add the avocado, placing it next to the tomatoes, then add a row of the eggs. Chop the chicken into bite-sized pieces and distribute evenly around the salad. Crumble the bacon and scatter it over the top of the dish.

6 For the dressing, mix together the mayonnaise, sour cream, buttermilk, blue cheese, and vinegar. Serve the salad, while the chicken is still warm, with the buttermilk dressing on the side. Any leftover dressing will keep in the fridge for up to 3 days, tightly sealed.

Ingredients:
10 ounces (300 g) tagliatelle
1 cup (100 g) baby spinach leaves
20 fresh basil leaves
2 tablespoons (30 ml) olive oil
1 pound (500 g) skinless salmon fillet, cut in 11/2 inch (4 cm) pieces
1/4 cup (40 g) pimento-stuffed green olives, halved
grated zest and juice of 1 lemon
2 scallions, finely chopped
1 cup (250 g) cherry tomatoes, halved

Method:
1 Cook the tagliatelle in a large saucepan of boiling water for 10 minutes, or until al dente.

2 Meanwhile, divide the spinach among four plates and sprinkle each portion with five basil leaves.

3 Heat the oil in a large frying pan over high heat. Add the salmon pieces and cook for 4 minutes, turning occasionally, until they are opaque but soft. Add the olives, lemon zest, lemon juice and scallions to the pan. Let bubble and heat through for a few seconds, then spoon the salmon and olive mixture and the juices over each bed of spinach and basil.

4 Add the tomatoes to the pan and stir them around for 30 seconds to heat through and to pick up any brown bits from bottom of the pan. Spoon the tomatoes over the salmon and serve with the tagliatelle.

OTHER IDEAS
+ Instead of the baby spinach, use a mix of arugula, mizuna and watercress.
+ Use scallops (without the roe) or calamari rings instead of the salmon.

Ingredients:
4 tuna steaks, about 1/4 pound (125 g) each
1 tablespoon (15 ml) ras el hanout spice mix
1 1/4 cups (300 g) green beans
2 tablespoons (30 ml) honey
grated zest and juice of 2 lemons
4 tomatoes, halved and cut into wedges
15 ounce (425 ml) can cannellini beans, drained and rinsed
2 tablespoons (30 ml) olive oil
1 small onion, halved and thinly sliced
2 large red peppers, seeded and sliced
2 cloves garlic, thinly sliced

Method:
1 Put the tuna steaks on a plate and rub the ras el hanout on both sides to coat. Set aside.

2 Cook the green beans in a saucepan of boiling water for 2–3 minutes, or until just tender. Drain, rinse under cold water, drain again and put into a bowl. Add the honey, lemon zest and lemon juice and mix well. Add the tomatoes and cannellini beans.

3 Heat half of the oil in a frying pan over high heat. Add the onion, peppers and garlic and cook, stirring, for 1 minute, or until very lightly cooked. Add to the tomato and bean mixture and stir to combine.

4 Return the pan to the heat and add the remaining oil. Add the tuna, scraping any spice mix from the plate onto the fish. Cook over high heat for 2 minutes, turn over and cook for another 2–3 minutes, pressing the fish lightly with a spatula, until just cooked through.

5 Divide the bean salad among four plates. Cut the tuna into thick slices and place them on the salad. Scrape any juices and spices from the pan, pour over the tuna and serve.

COOK’S TIP
+ To make ras el hanout, combine 1 tablespoon (15 ml) ground coriander, 1/2 teaspoon (2 ml) ground cinnamon, 1/4 teaspoon (1 ml) ground mace or freshly grated nutmeg and a large pinch of chili powder. Alternatively, use 2–4 teaspoons (10–20 ml) of an African spice paste, such as harissa.

1 1/2 tablespoons (22 ml) chopped fresh parsley
1 tablespoon (15 ml) lemon juice
freshly ground black pepper

Method:
1 Put the couscous and currants in a large heatproof bowl. Add the boiling water and stir to combine, cover with foil and set aside to soak for 5 minutes, or until all the water has been absorbed. Fluff the couscous with a fork to break up any lumps.

2 Meanwhile, toast the almonds in a nonstick frying pan over a medium heat for 3–4 minutes, or until lightly golden, stirring occasionally. Remove from the pan.

3 Heat 2 teaspoons (10 ml) of the oil in the pan over medium heat. Add the onion and pepper and cook, stirring, for 3–4 minutes, or until softened.

4 Add the almonds, cumin, chickpeas, olives, parsley, lemon juice and remaining oil and stir to combine. Add the chickpea mixture to the couscous in the bowl, season to taste with pepper and stir well. Serve immediately, or cover and refrigerate until required.

ANOTHER IDEA
+ Use any leftover chickpeas to make hummus. Blend them with crushed garlic, olive oil, tahini (sesame seed paste), ground cumin and lemon juice. Spread on sandwiches or use as a dip.

1 red, 1 yellow and 1 green pepper, seeded and cut into 1 inch (2.5 cm) squares
1/2 cup (100 g) broccoli florets
2 ounces (50 g) firm rindless goat cheese, roughly diced
2 tablespoons (30 ml) sunflower seeds, toasted

Method:
1 Put the lentils into a large saucepan, cover with water and bring to a boil, skimming off any scum. Flatten the garlic clove with the side of a knife and add to the lentils, along with the cumin and lemon slice. Reduce the heat and simmer for about 30 minutes, or until the lentils are tender.

2 Meanwhile, to make the dressing, put the lemon juice, oil and cilantro into a large salad bowl, season to taste with pepper, and whisk together.

3 Drain the lentils, discarding the lemon slice and garlic, and add them to the salad bowl. Toss gently to mix with the dressing.

4 Add the onion, apricots, peppers and broccoli to the bowl, and mix gently. Scatter the goat cheese and sunflower seeds over the salad. Serve immediately.

ANOTHER IDEA
+ Use 2/3 cup (150 g) frozen fava beans instead of broccoli florets. Cook the beans in boiling water for 5 minutes, or until tender. Drain and refresh under cold water.
