Oat Crepes

How to Make Oat Crepes Recipe - Like the oatcakes of northern England, these fine-textured crepes are made with a blend of flour and ground rolled oats for extra fiber and a nutty flavor. In this recipe, nutrient-rich mushrooms are cooked in a low-fat white sauce for the filling.

SERVES: 4 (MAKES 8)

PREPARATION: 20 MINUTES, PLUS 15 MINUTES STANDING, COOKING: 30 MINUTES

Ingredients:
3/4 cup (110 g) whole-wheat flour
1/3 cup (40 g) rolled oats
3 eggs
1 tablespoon (15 ml) olive oil, plus 1 tablespoon (15 ml) extra for frying
3/4 cup (175 ml) low-fat milk

Filling:
2 tablespoons (30 ml) olive oil
1 small onion, finely chopped
1 clove garlic, crushed
1 cup (250 g) button mushrooms, thinly sliced
2 tablespoons (30 ml) all-purpose flour
1 cup (250 ml) low-fat milk
2 tablespoons (30 ml) finely snipped fresh chives

Method:
1 Put the whole-wheat flour and oats in a food processor or blender and process at high speed until finely ground. Place into a large bowl.

2 Put the eggs, 1 tablespoon (15 ml) oil and the milk in a pitcher and whisk until combined. Make a well in the center of the flour mixture and pour in the egg mixture. Whisk until smooth. Let the batter stand for 15 minutes.

3 Meanwhile, to make the filling, heat the oil in a large saucepan over a medium–high heat. Add the onion and cook, stirring, for 3–4 minutes, or until soft. Add the garlic and mushrooms and cook, stirring, for another 3–4 minutes, or until the mushrooms are tender.

4 Reduce the heat to medium. Sprinkle the flour evenly over the mushrooms and cook, stirring quickly, for 1 minute. Gradually stir in the milk until smooth. Cook, stirring, for 3–4 minutes, or until the mixture boils and thickens. Stir in the chives. Remove the pan from the heat and cover to keep warm.

5 Heat a little oil in a frying pan or crepe pan over medium heat. Spoon 1/4 cup (50 ml) of batter into the pan and swirl to coat the base. Cook for 1 minute, turn and cook for another 1 minute, or until golden brown. Transfer to a plate and cover to keep warm. Repeat with the remaining batter to make eight crepes.

6 Divide the mushroom mixture among the crepes. Fold the crepes to enclose the filling and serve.

ANOTHER IDEA
+ These oat crepes can be served spread with jam, or with fillings such as fresh berries and low-fat vanilla yogurt, or sliced banana and low-fat ricotta flavored with honey and ground cinnamon.

Salmon Crepes

How to Make Salmon Crepes Recipe - preparation 20 minutes cooking time 25 minutes

Serves 4


Ingredients:
4 x 125g/4oz skinned salmon fillets
200g/7oz baby spinach leaves
2 tbsp sunflower oil
150g/5oz/⅔ cup crème fraîche
4 tbsp freshly grated Parmesan
salt and ground black pepper

For the crêpes:
75g/3oz/¾ cup fine polenta
75g/3oz/¾ cup rice flour
a pinch of grated nutmeg
2 medium eggs
2 tbsp freshly grated Parmesan
200ml/7fl oz/¾ cup milk

Method:
1 Preheat the grill and line the grill rack with foil.

2 Lay the salmon on top. Season and grill for 10–12 minutes, turning once, until golden brown and cooked. Flake the salmon, discarding the skin and bones. Keep warm.

3 Cook the spinach with 1 tsp water in a covered pan over a low heat until it wilts. Drain well, pressing down with a plate.

4 Put half the spinach in a blender or food processor with the crêpe ingredients and blitz until smooth. Pour into a jug.

5 Heat a little oil in a frying pan over a medium heat. Pour in one-quarter of the crêpe batter, tilting the pan to swirl it evenly over the surface. Cook until golden brown underneath, then flip over and cook the other side. Slide out on to a plate and make three more crêpes in the same way.

6 Spoon the remaining spinach on to each crêpe and pile the salmon on top. Spoon the crème fraîche and Parmesan over. Roll up the crêpes and serve.

Cinnamon Crepes

How to Make Cinnamon Crepes Recipe - preparation 5 minutes plus standing cooking time 15–20 minutes

Serves 6

Ingredients:
125g/4oz/1 cup + 2 tbsp plain (all-purpose) flour
½ tsp ground cinnamon
2 medium (US large) eggs
300ml/½ pint/1¼ cups milk
olive oil to fry
sugar and Greek yogurt to serve

Method:
1 Beat the flour, cinnamon, egg and milk together in a bowl to make a smooth batter. Set aside to stand for 20 minutes.

2 Heat a small heavy-based frying pan over a medium heat. When the pan is really hot, add a few drops of oil, then pour in a little batter and tilt the pan to coat the bottom evenly. Cook for 1–2 minutes until golden underneath, then flip over and cook the other side. Slide out of the pan and keep warm.

3 Repeat with the remaining batter, adding more oil if needed, to make six crêpes.

4 Serve sprinkled with sugar with a spoonful of yogurt.

Ingredients:
125g/4oz/1 cup + 2 tbsp plain (all-purpose) flour
a pinch of salt
2 medium (US large) eggs
300ml/½ pint/1¼ cups milk
a little lard (shortening) to fry
caster (superfine) sugar and lemon juice to serve

Method:
1 Sift the flour and salt into a bowl and make a well in the centre. Beat in the eggs. Gradually beat in the milk, drawing in the flour from the sides, to make a smooth batter. Cover and set aside to stand for 20 minutes.

2 Heat a tiny knob of lard in an 18cm/7in heavy-based non-stick frying pan. Pour in just enough batter to thinly coat the bottom of the pan, tilting it. Cook over a medium-high heat for 1–2 minutes until set and golden brown underneath. Flip the crêpe over and cook the second side.

3 Slide the crêpe out of the pan on to a plate and keep hot. Cook the remaining crêpes in the same way, stacking them on top of each other with parchment paper in between.

4 Serve the crêpes, folded over or rolled up, sprinkled with sugar and lemon juice.

Ingredients:
125g/4oz/1 cup + 2 tbsp plain (all-purpose) flour
1 egg + 1 egg yolk
1 tbsp sunflower oil, plus extra to fry
250ml/9fl oz/1 cup milk
For the lemon filling
75g/3oz/6 tbsp butter, softened
50g/2oz/¼ cup caster (superfine) sugar
grated zest of 1 lemon

For the cherry compote:
pared rind of ½ lemon
75g/3oz/6 tbsp caster (superfine) sugar
450g/1lb cherries, pitted

Method:
1 To make the crêpes, sift the flour into a bowl and stir in the egg, egg yolk and oil. Gradually whisk in the milk, beating until smooth. Set aside for 15 minutes.

2 Meanwhile, cream all the lemon filling ingredients together in a bowl until light and fluffy.

3 To make the cherry compote, put the lemon rind, sugar and 175ml/6fl oz/¾ cup water in a pan and heat gently, stirring until the sugar dissolves. Boil for 3 minutes until syrupy. Add the cherries and cook for 5 minutes. Discard the lemon rind.

4 Pour a little oil into an 18cm/7in frying pan and place over a medium heat. When hot, pour 2–3 tbsp batter into the pan, tilting it to coat the bottom. Cook until browned on the underside, then flip the crêpe over and cook the other side. Slide out on to a large plate and cook the remaining crêpes in the same way.

5 Spread each crêpe thinly with lemon butter, then fold into four. Place half the crêpes in a large frying pan and set over a medium heat for 5 minutes, turning once, until hot. Repeat with the remaining crêpes. Reheat the cherry compote.

6 Serve the crêpes immediately with the compote.

Basic Crepes

Ingredients:
1 cup all-purpose flour
2 eggs
1/2 cup milk
1/2 cup water
1/4 teaspoon salt

Method:
In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth.

Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.

Chocolate Filled Crepes

How to make Chocolate Filled Crepes recipe - I cannot count the number of times I have made this recipe in the last decade. This is my boys’ favorite brunch dish.

SERVES 8

Ingredients:
2 eggs
1 cup milk
2 1/4 cups all-purpose flour
Nutella, for filling

Method:
In a large bowl, lightly whisk together the eggs, milk, and flour with 1 cup water (the batter will be quite thin). Heat a nonstick skillet (brush with a little melted butter, if needed).

Pour a quarter cup of batter into the pan and swirl in a circular motion outward so the batter spreads evenly. Cook for 2 minutes, or until the bottom is light brown.

Flip to cook the other side for another minute. Remove and spread with Nutella. Seal by folding the crepe in thirds, or roll and cut in half. Repeat until all the batter is gone.

Method:
1 Sift the flour into a mixing bowl with a pinch of salt and make a well in the center. Put the egg and a little of the milk in the well. Using a wooden spoon, gradually stir the egg mixture, letting a little of the flour fall in as you go and adding the rest of the milk a little a time. When it’s all incorporated, beat the mixture with an electric mixer to remove any lumps. Transfer to the refrigerator to rest for 15 minutes.

2 Meanwhile, put the cream in a mixing bowl and beat with an electric mixer until lightly whipped, then aside. Put the butter and sugar in a pan over low heat and stir until the sugar has dissolved. Add the apple slices and toss well to coat. Cook for 5–10 minutes or until the apples are caramelized, then set aside and keep warm.

3 Heat a crêpe pan or small frying pan over medium-high heat. When hot, add a tiny amount of vegetable oil, then swirl it around the pan and pour the excess into a heatproof liquid-measure cup. Add 2 tbsp of batter to the pan and swirl it around so it covers the bottom. Loosen the edges of the crêpe with a spatula and
cook for 1 minute or until golden. Flip the crêpe and cook the other side for 30 seconds, or until set. Slide the crêpe onto a plate and repeat until all the batter has been used.

4 To serve, pile some of the apple mixture onto each crêpe and top with a dollop of cream; then fold to enclose the filling, and sprinkle with chocolate.

Add 2 tablespoons of batter to the pan and swirl so it covers the bottom. Loosen the edges of the crêpe with a spatula or blunt knife and cook for 1 minute
or until golden. Flip the crêpe and cook the other side for 30 seconds to 1 minute, until set. Slide the crêpe onto a warm plate and repeat.

Add 2 tablespoons of batter to the pan and swirl so it covers the bottom. Loosen the edges of the crêpe with a spatula and cook for 1 minute or until golden. 1 ball pizza dough
all-purpose flour, for dusting
semolina flour or cornmeal
3–4 roasted red peppers from a jar, drained and chopped

2–3 tbsp ricotta or fresh mozzarella, torn into pieces
sea salt and freshly ground black pepper

Method:
1 Preheat the oven to 475°F (245°C). Put a heavy baking sheet in the oven to get hot. (They both need to be really hot before cooking the pizza.)

2 Place the dough on a floured surface and use a rolling pin to roll it out as thin as you can about 10–12in (25–30cm) in diameter. Brush the hot baking sheet with oil, sprinkle with semolina flour, and carefully place the dough on top.

3 Spoon the peppers, olives, capers, and ricotta onto half of the dough base, leaving a ½in (1cm) border around the edge. Season well with salt and pepper. Moisten the edges of the dough with a little water, then fold in half and seal together with your fingers. Sprinkle the top with a little water, then bake for 15–20 minutes or until golden and crispy.

1 Preheat the oven to 475°F (245°C). Put a heavy baking tray in the oven to get hot. (They both need to be really hot before cooking the pizza.)

2 Place the dough on a floured surface and roll it out as thin as you can about 10–12in (25–30cm) in diameter. Brush the hot baking tray with oil, sprinkle with semolina, and place the dough on top.

3 Spread the spinach over half the dough, leaving a ½in (1cm) border around the edge. Top with the ham, mozzarella, and basil leaves. Moisten the edges of the dough with a little water, then fold in half and seal together with your fingers. Sprinkle the top with a little water, then bake for15 minutes, until golden and crispy.

Cook’s Notes:
Sprinkling the top of the calzone with a little water helps crisp up the dough.
