How to make chocolate cake recipe - Calories per serving 392

Serves 6

Preparation time 5 minutes, Cooking time 35–40 minutes

Ingredients:
75 g (3 oz) coconut oil, melted, plus extra for greasing
400 g (13 oz) can kidney beans, rinsed and drained
100 g (3½ oz) rice flour
50 g (2 oz) gluten-free cocoa powder, plus extra for sifting
1½ teaspoons gluten-free baking powder
125 g (4 oz) light muscovado sugar
3 large eggs
raspberries, to serve

Method:
Grease a 20 cm (8 inch) spring-form cake tin with coconut oil and line the base with nonstick baking paper.

Place all the ingredients in a food processor or blender and blitz to a smooth batter, then spoon the mixture into the prepared tin.

Bake in a preheated oven, 180°C (350°F), Gas Mark 4, for 35–40 minutes until a skewer inserted into the centre comes out clean. Leave to cool slightly in the tin, then turn out on to a wire rack and leave to cool completely before serving.

Sift with cocoa powder and serve with a few raspberries.

For chocolate mousse, melt 225 g (7½ oz) chopped gluten-free plain dark chocolate in a heatproof bowl set over a pan of gently simmering water, making sure the bottom of the bowl does not touch the water. Add 10 g (⅓ oz) butter, 1 tablespoon brandy (optional) and 3 large egg yolks, one at a time, stirring until combined. Leave to cool slightly. Whisk 3 egg whites in a large clean bowl until just stiff. In a separate bowl, beat 150 ml (¼ pint) double cream until lightly whipped, then fold the cream and egg whites into the chocolate mixture. Spoon into 6 small glasses or ramekins and chill for at least 1 hour before serving. Calories per serving 383

Ingredients:
6 egg yolks
3/4 cup white sugar
2/3 cup milk
1 1/4 cups heavy cream
1/2 teaspoon vanilla extract
1 pound mascarpone cheese
1/4 cup strong brewed coffee, room temperature
2 tablespoons rum
2 (3 ounce) packages ladyfinger cookies
1 tablespoon unsweetened cocoa powder

Method:
In a medium saucepan, whisk together egg yolks and sugar until well blended. Whisk in milk and cook over medium heat, stirring constantly, until mixture boils. Boil gently for 1 minute, remove from heat and allow to cool slightly. Cover tightly and chill in refrigerator 1 hour.
   
In a medium bowl, beat cream with vanilla until stiff peaks form. Whisk mascarpone into yolk mixture until smooth.
   
In a small bowl, combine coffee and rum. Split ladyfingers in half lengthwise and drizzle with coffee mixture.
   
Arrange half of soaked ladyfingers in bottom of a 7x11 inch dish. Spread half of mascarpone mixture over ladyfingers, then half of whipped cream over that. Repeat layers and sprinkle with cocoa. Cover and refrigerate 4 to 6 hours, until set.

Preheat oven to 400 degrees F (200 degrees C). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.
   
Bake 6 to 8 minutes in preheated oven. Cool completely.

1 1/4 cups water
1/3 cup vegetable oil
3 large eggs
1 (16 ounce) container Duncan Hines® Creamy Home-Style Cream Cheese Frosting
Sprinkles or additional garnishes

Method:
Preheat oven to 350 degrees F. Grease muffin pans or line with paper baking cups.
   
Blend dry mix, water, oil and eggs in large bowl at low speed until moistened (about 30 seconds). Beat at medium speed for 2 minutes. Spoon batter into muffin pan or paper cups.
   
Bake cupcakes for 19-22 minutes. Add 3-5 minutes to bake time for dark or coated pans. Cupcakes are done when toothpick inserted in center comes out clean.
   
Cool in pan on wire rack for 15 minutes. Cool completely before frosting. Garnish, and enjoy!

Ingredients:
1/4 cup butter
1 (16 ounce) package miniature marshmallows
1/4 cup water
1 teaspoon vanilla extract
2 pounds confectioners' sugar, divided

Method:
Place the butter in a shallow bowl, and set aside.
   
Place the marshmallows in a large microwave-safe bowl, and microwave on High for 30 seconds to 1 minute to start melting the marshmallows. Carefully stir the water and vanilla extract into the hot marshmallows, and stir until the mixture is smooth. Slowly beat in the confectioners' sugar, a cup at a time, until you have a sticky dough. Reserve 1 cup of powdered sugar for kneading. The dough will be very stiff.
   
Rub your hands thoroughly with butter, and begin kneading the sticky dough. As you knead, the dough will become workable and pliable. Turn the dough out onto a working surface dusted with confectioners' sugar and continue kneading until the fondant is smooth and no longer sticky to the touch, 5 to 10 minutes.
   
Form the fondant into a ball, wrap it tightly in plastic wrap, and refrigerate overnight. To use, allow the fondant to come to room temperature, and roll it out onto a flat surface dusted with confectioners' sugar.

Easy OREO Truffles

How to make Easy OREO Truffles Recipe - These truffles are very easy and delicious. You can't go wrong with OREO, cream cheese and chocolate.

Serve: 42

Ingredients:
1 (16 ounce) package OREO Chocolate Sandwich Cookies, divided
1 (8 ounce) package PHILADELPHIA Cream Cheese, softened
2 (8 ounce) packages BAKER'S Semi-Sweet Baking Chocolate, melted

Method:   
Crush 9 of the cookies to fine crumbs in food processor; reserve for later use. (Cookies can also be finely crushed in a resealable plastic bag using a rolling pin.)

Crush remaining 36 cookies to fine crumbs; place in medium bowl. Add cream cheese; mix until well blended. Roll cookie mixture into 42 balls, about 1-inch in diameter.
   
Dip balls in chocolate; place on wax paper-covered baking sheet. (Any leftover chocolate can be stored at room temperature for another use.) Sprinkle with reserved cookie crumbs.
   
Refrigerate until firm, about 1 hour. Store leftover truffles, covered, in refrigerator.

Notes and Tips:
How to How to Easily Dip Truffles? Place truffle ball in melted chocolate to coat; roll if necessary. Lift truffle from chocolate using 2 forks (this will allow excess chocolate to run off) before placing on wax paper.

Bake in preheated oven for 10 to 12 minutes. Let stand on the cookie sheet for a minute before transferring to wire racks to cool.

In a large bowl, mix cream cheese with sugar until smooth. Blend in milk, and then mix in the eggs one at a time, mixing just enough to incorporate. Mix in sour cream, vanilla and flour until smooth. Pour filling into prepared crust.
   
Bake in preheated oven for 1 hour. Turn the oven off, and let cake cool in oven with the door closed for 5 to 6 hours; this prevents cracking. Chill in refrigerator until serving.

Ingredients:
4 1/2 cups all-purpose flour
2 teaspoons baking soda
2 cups butter, softened
1 1/2 cups packed brown sugar
1/2 cup white sugar
2 (3.4 ounce) packages instant vanilla pudding mix
4 eggs
2 teaspoons vanilla extract
4 cups semisweet chocolate chips
2 cups chopped walnuts (optional)

Method:
Preheat oven to 350 degrees F (175 degrees C). Sift together the flour and baking soda, set aside.
   
In a large bowl, cream together the butter, brown sugar, and white sugar. Beat in the instant pudding mix until blended.

Stir in the eggs and vanilla. Blend in the flour mixture. Finally, stir in the chocolate chips and nuts. Drop cookies by rounded spoonfuls onto ungreased cookie sheets.

Bake for 10 to 12 minutes in the preheated oven. Edges should be golden brown.

Notes and Tips:
Aluminum foil can be used to keep food moist, cook it evenly, and make clean-up easier.

2 cups pitted dates (preferably Medjool), chopped
½ tsp baking soda
1½ cups rolled oats
1 cup all-purpose flour
½ cup light brown sugar (packed)
½ tsp salt
12 tbsp (1½ sticks) butter, cut into pieces
2 tbsp Lyle’s Golden Syrup or light

Method:
1 Preheat the oven to 350°F (180°C). Line the bottom of an 8in (20.5cm) square baking pan with parchment paper. Place the dates and baking soda in a saucepan with enough water to cover, simmer for 5 minutes, then drain, reserving the liquid. Purée the dates in a blender with 3 tbsp of the cooking liquid, then set aside.corn syrup

2 In a bowl, combine the oats, flour, brown sugar, and salt. Add the butter and syrup. Blend the ingredients until the mixture resembles coarse crumbs. Press half of the mixture onto the bottom of the pan. Spread the date purée evenly over the top, then spoon in the remaining oat mixture in an even layer to cover the dates. Bake for 45 to 55 minutes, or until golden brown. Let cool for 10 minutes, then mark into 16 squares with a knife. Leave to cool completely before removing the cookies with a spatula.

Makes 12–14
4½oz (125g) good-quality semi-sweet chocolate, plus scant 1oz (25g), finely grated
drizzle of Baileys® Irish Cream liqueur or brandy
¼ cup shelled and skinned Brazil nuts, finely chopped
¼ cup dried cherries, chopped

Method:
1 Break the chocolate into small pieces and place in a microwave-safe bowl. Microwave on Medium for 1–2 minutes or until just melted, then stir until smooth. Stir in the liqueur to blend, then stir in the nuts and cherries.

2 Leave to cool for 30 minutes, then scoop up a generous teaspoonful and form into a ball. Roll in the grated chocolate to coat, then place in a parchment-lined pan. Repeat with the remaining chocolate mixture. Refrigerate the truffles for 30 minutesor until set. Serve as a sweet treat with coffee or espresso.
