Waffles with Blackberry Sauce

How to Make Waffles with Blackberry Sauce Recipe - Crisp, crunchy waffles, so popular in France, Belgium and the U.S, too, are a lovely treat for breakfast or brunch. To make these you will need a waffle iron that can be used on the stovetop or an electric waffle maker.

SERVES: 4 (MAKES ABOUT 8 WAFFLES)

PREPARATION: 20 MINUTES, COOKING: 15 MINUTES

Ingredients:
1 teaspoon (5 ml) butter, for greasing
3/4 cup (110 g) all-purpose flour
1/2 teaspoon (2 ml) ground cinnamon
1 teaspoon (5 ml) baking powder
1 tablespoon (15 ml) superfine sugar
1 large egg, separated
1 cup (250 ml) low-fat milk
1 tablespoon (15 ml) butter, melted
1 1/2 tablespoons (22 ml) finely chopped pecans

Blackberry sauce:
1 large, ripe pear
1/3 cup (75 ml) pure maple syrup
1/2 cup (50 g) pecans
3/4 cup (100 g) blackberries

Method:
1 To make the maple and blackberry sauce, cut the pear lengthwise into quarters and cut out the core, then cut the pear into small dice. Put the pear and maple syrup in a small heavy-bottom saucepan over low heat to warm through, then remove from the heat. Stir in the pecans and blackberries. Set aside.

2 Heat and lightly grease the waffle iron or electric waffle maker according to the manufacturer’s instructions.

3 Meanwhile, to make the batter, sift the flour, cinnamon, baking powder and sugar into a bowl. Make a well in the center, then add the egg yolk and milk to the well. Gently whisk the egg yolk and milk together, and gradually whisk in the flour to make a thick, smooth batter. Whisk in the melted butter, and stir in the chopped pecans.

4 Whisk the egg white in a separate bowl until stiff peaks form. Pile the egg white on top of the batter and, using a large metal spoon, fold it in gently.

5 Spoon 3–4 tablespoons (45–60 ml) of batter into the center of the hot waffle iron or maker, then close the lid tightly. If using a waffle iron on the stovetop, cook for about 30 seconds, then turn the waffle iron over and cook for another 30 seconds. Open the waffle iron: The waffle should be golden brown on both sides and should come away easily from the iron. If using an electric waffle maker, follow the manufacturer’s instructions (usually allow 2–3 minutes for each waffle). Keep warm while cooking the rest of the waffles.

6 Just before all the waffles are ready, gently warm the fruit sauce. Serve with the warm waffles.

How to Make Easy Waffles Recipe - preparation 5 minutes cooking time 16 minutes

Serves 4

Ingredients:
125g/4oz/1 cup + 2 tbsp self-raising (self-rising) flour
a pinch of salt
1 tbsp caster (superfine) sugar
1 medium (US large) egg, separated
25g/1oz/2 tbsp butter, melted
250ml/8fl oz/1 cup milk
maple syrup to serve

Method:
1 Heat the waffle iron according to the manufacturer’s instructions.

2 Mix the flour, salt and sugar together in a bowl. Add the egg yolk, melted butter and milk and beat until you havea smooth coating batter.

3 Whisk the egg white in a clean, grease-free bowl until stiff. Fold gently into the batter with a metal spoon. Pour just enough batter into the iron to run over the surface.

4 Close the iron and cook for 2–3 minutes, turning the iron if using a non-electric type. The waffle is cooked when it is golden brown and crisp and easily removed from the iron. Cook the remainder in the same way.

5 Serve the waffles immediately with maple syrup.

Ingredients:
2 cups all-purpose flour
1 teaspoon salt
4 teaspoons baking powder
2 tablespoons white sugar
2 eggs
1 1/2 cups warm milk

Method:
In a large bowl, mix together flour, salt, baking powder and sugar; set aside. Preheat waffle iron to desired temperature.
   
In a separate bowl, beat the eggs. Stir in the milk, butter and vanilla. Pour the milk mixture into the flour mixture; beat until blended.

How to make toasted ginger syrup waffles recipe

Serves 4

Total cooking time 10 minutes

Ingredients:
50 g (2 oz) butter
4 tablespoons double cream
2 tablespoons soft dark brown sugar
15 g (½ oz) stem ginger, drained and finely chopped
2 tablespoons stem ginger syrup
8 Belgian-style toasting waffles
good-quality vanilla ice cream, to serve

Method:
Place the butter in a small pan with the cream, sugar, stem ginger and syrup. Warm over a low heat for 5–6 minutes, stirring occasionally, until the butter has melted and the sugar dissolved.

Meanwhile, toast the waffles according to the packet instructions and arrange on serving plates. Top with a scoop of ice cream and serve warm, drizzled with the ginger syrup.

For ginger syrup pain perdu, prepare the ginger syrup as in the toasted ginger syrup waffles. Meanwhile, place 2 eggs in a large, shallow bowl with 100 g (3½ oz) caster sugar and 250 ml (8 fl oz) milk and whisk until smooth.

Dip 4 slices of slightly stale brioche into the mixture, turning to coat both sides. Melt 75 g (3 oz) unsalted butter in a large, nonstick frying pan and cook the brioche over a medium-low heat for 4–5 minutes, turning once, until golden.

Arrange on plates and top with a scoop of vanilla ice cream, a dusting of icing sugar and a drizzle of the ginger syrup. Total cooking time 20 minutes.
