SERVES 8–10

PREP TIME 30 mins, COOK TIME 10 mins, plus chilling

Ingredients:
1 pound cake
6 ripe bananas, cut into 1⁄4in (5mm) slices

For the pudding:
2 cups whole milk
4 tbsp cornstarch
1⁄2 cup sugar
1 tbsp butter
1 tsp vanilla extract

For the whipped cream:
2 cups heavy cream
2 tbsp sugar
1 tsp vanilla extract

Method:
1 Preheat the oven to 375ºF (190ºC). First, make the pudding. In a saucepan, bring the milk almost to a boil over high heat, then reduce the heat to a simmer. Stir in the cornstarch and sugar, and whisk continuously until thickened. Remove from the heat and add the butter and vanilla. Chill.

2 Cut the pound cake into 1⁄2in (1cm) thick slices and toast them on a baking sheet in the oven for 10 minutes, or until both sides are well toasted. Place half the cake slices in a single layer at the bottom of a 9 x 13in (23 x 33cm) cake pan. Top with half the banana slices.

3 Pour the pudding over the first layer evenly. Add the second layer of cake and top with the remaining bananas.

4 In a large bowl, whisk the cream, sugar, and vanilla extract with an electric hand whisk until stiff. Using a spatula, spread it over the bananas. Chill for 45 minutes to 1 hour before serving.

2 In a bowl, mix the eggs, vanilla extract, milk, and sugar. Pour the mixture over the bread and leave to soak for 10–15 minutes.

3 Put the casserole in the oven and bake for about 35 minutes, or until the liquid is absorbed and the bread is crisp. Slice and serve with vanilla ice cream or whipped cream.

2 tablespoons (30 ml) orange juice concentrate

1/2 teaspoon (2 ml) ground allspice
pinch of salt
1 large egg, lightly beaten
4 large egg whites, lightly beaten
1/2 cup (30 g) shaved coconut

Method:
1 Preheat the oven to 350°F (180°C). Lightly grease an 8 cup (2 liter) baking dish with the oil.

2 Combine all the ingredients except the coconut in a large bowl. Pour the sweet potato mixture into the baking dish and cover with foil.

3 Bake for 1 hour. Top with the coconut and bake for another 10 minutes, or until the center is set and the coconut turns golden.

Each serving provides
178 calories, 7 g protein, 6 g fat (3 g saturated fat), 25 g carbohydrate (20 g sugars), 1 g fiber, 137 mg sodium

PREPARATION: 10 MINUTES, PLUS 20 MINUTES SOAKING AND 2 HOURS, CHILLING, COOKING: 10 MINUTES

Ingredients:
1/3 cup (60 g) fine or medium bulgur, rinsed
1/4 teaspoon (1 ml) ground cardamom
1 1/4 cups (300 ml) low-fat milk
2/3 cup (85 g) raisins
1/4 teaspoon (1 ml) ground cinnamon
1 tablespoon (15 ml) honey
1 large egg
1/2 teaspoon (2 ml) vanilla extract
1 tablespoon (15 ml) grated lemon zest
4 tablespoons (60 ml) chopped pistachios or toasted slivered almonds

Method:
1 Combine the bulgur, cardamom and 1 cup (250 ml) water in a saucepan over medium–high heat. Bring to a simmer, remove the pan from the heat, cover and set aside for about 20 minutes, or until the bulgur is tender. Drain in a sieve and press out the excess water, and return the bulgur to the pan.

2 Add the milk, raisins, cinnamon and honey and simmer over medium–high heat, stirring often. Reduce the heat to medium–low and cook, stirring, for 2 minutes.

3 Whisk the egg in a bowl. Gradually stir the bulgur mixture into the egg. Return the egg and bulgur mixture to the pan and cook over medium–low heat, stirring constantly, for 1–2 minutes, or until slightly thickened. Do not allow the mixture to boil. (You can use an instant-read thermometer to gauge readiness; pudding should reach a temperature of 158°F (70°C.)

4 Transfer the mixture to a clean bowl and stir in the vanilla and half of the lemon zest. Let cool slightly, cover and refrigerate for 2 hours, or until chilled.

5 Divide the bulgur pudding among four bowls and sprinkle each with 1 tablespoon (15 ml) pistachios. Top with the remaining lemon zest.

Each serving provides
171 calories, 7 g protein, 5 g fat (1 g saturated fat), 25 g carbohydrate (19 g sugars), 3 g fiber, 52 mg sodium

Ingredients:
1/4 cup (55 g) sugar
2 large eggs
3 large egg whites
2 cups (500 ml) low-fat milk
1 teaspoon (5 ml) vanilla extract
olive oil spray, for greasing
8 slices whole-grain bread, toasted
2 cups (310 g) blueberries
2 cups (250 g) raspberries

Method:
1 Put 2 tablespoons (30 ml) sugar in a bowl. Add the eggs, egg whites, milk and vanilla and whisk together until combined.

2 Spray a 8-inch (20-cm) square baking dish with olive oil spray. Place four slices of toast in the bottom of the baking dish, then pour half the egg mixture evenly over the top. Repeat with the remaining toast and egg mixture. Allow to stand for 20 minutes.

3 Meanwhile, preheat the oven to 350°F (180°C). Place the baking dish in a large roasting pan. Put the roasting pan on an oven rack and pour in enough hot water to come halfway up the outside of the baking dish. Bake for 40 minutes, or until the pudding is set and the top is golden and puffed. Remove from oven and cool slightly.

4 In a bowl, toss the berries with the remaining sugar. Serve the bread pudding warm, topped with the berries.

Ingredients:
125g/4oz/½ cup butter, diced, plus extra to grease
2 pears
2 dessert apples
340g/12oz plums

3 tbsp gluten-free cornflour (cornstarch)
1 tsp gluten-free baking powder
2 medium eggs

Method:
1 Preheat the oven to 180°C/350°F/Gas 4. Butter a large deep baking dish.

2 Peel, core and slice the pears and apples. Stone the plums and cut into slices. Place the fruit in the baking dish and sprinkle with 3 tbsp sugar and the juice of ½ lemon. Bake in the oven, uncovered, for 15 minutes.

3 Meanwhile, mix the flours and baking powder together in a bowl. Cream the butter and remaining sugar until light and fluffy. Beat in the eggs, one at a time, then gradually mix in the flour. Add the milk, lemon zest and remaining lemon juice. Spoon it over the fruit and level the top.

4 Bake in the oven for 25 minutes or until the topping is golden and well risen. Serve warm.

Ingredients:
700g/1½lb/6 cups mixed berries, e.g. redcurrants, blackcurrants, strawberries and
raspberries
125g/4oz/½ cup caster (superfine) sugar

9 thick slices slightly stale white bread, crusts removed
crème fraîche to serve

Method:
1 Put the redcurrants and blackcurrants in a pan with the sugar and cassis. Set over a low heat and simmer gently for 4–5 minutes, stirring, until the sugar dissolves. Add the raspberries and cook for 2 minutes.

2 Meanwhile, line a 1 litre/1¾ pint/4 cup bowl with clingfilm (plastic wrap). Put the base of the bowl on a slice of bread and cut around it. Put the bread in the bottom of the bowl.

3 Line the sides with more slices of bread, slightly overlapping them to avoid any gaps. Spoon in the fruit – the juice will soak into the bread. Reserve a few spoonfuls of juice.

4 Cut the remaining bread to fit the top of the pudding neatly, using a sharp knife to trim any excess bread from around the edges. Wrap in clingfilm (plastic wrap), weigh down with a saucer and a can and chill in the refrigerator overnight.

5 Unwrap the outer clingfilm (plastic wrap) and upturn the pudding on to a plate. Remove the inner clingfilm (plastic wrap). Drizzle with the reserved juice and serve, cut into slices, with crème fraîche.

5 Sprinkle the remaining sugar over the custards to form a thin layer. Pop under a very hot grill (broiler) for 2–3 minutes until it caramelizes. Set aside to cool for 1 hour until the caramel is crisp and cold.

2 Put the cream, milk, orange zest and 100g/3½oz/7 tbsp sugar in a pan and bring to the boil, stirring to dissolve the sugar. Remove from the heat.

3 Lift the gelatine sheets out of the water and squeeze out any excess liquid. Add to the cream mixture and stir until dissolved. Pour into the dariole moulds. When cool, chill in the refrigerator for 4–6 hours.

4 Squeeze the juice from the oranges and strain into a pan. Add the remaining sugar and bring to the boil, then reduce the heat and simmer for 10 minutes. Set aside to cool.

5 Run a palette knife around the edge of each panna cotta and invert on to a serving plate. Serve with the orange sauce.

Ingredients:
225g/8oz mixed blueberries, strawberries, raspberries

3 Cut the slices of brioche into triangles. Dip the slices into the egg mixture, turning them over to soak the other side.

4 Melt the butter in a frying pan over a low to medium heat. Add the brioche and cook for 4–5 minutes until golden brown on both sides.

5 Serve the immediately with the warm poached berries, dusted with icing sugar or drizzled with maple syrup.

4 Divide among six glass dishes and top with raspberry sauce.

4 Bake in the oven for 1 hour or until the custard is set.

5 Whisk the egg whites until stiff. Fold in the remaining sugar and whisk until glossy. Pile on top of the custard and return to the oven for 15 minutes or until set and golden brown.
