Ingredients:
1½ tablespoons olive oil
1 onion, finely diced
2 garlic cloves, finely chopped
1 green chilli, deseeded and finely chopped

1 tablespoon toasted flaked almonds, to garnish

Method:
Heat 1 tablespoon of the oil in a pan, add the onion and fry for 5 minutes until soft. Stir in the garlic and chilli and cook for a further 1 minute. Add the seeds and garam masala and continue to cook for 2 minutes.

Stir in the lentils, tomatoes and stock and bring to the boil. Reduce the heat and simmer for 20 minutes.

Meanwhile, heat the remaining oil in a separate large frying pan and cook the sea bass for 3–4 minutes on each side until cooked through.

Stir the spinach and chopped coriander through the lentils until just starting to wilt, then season. Divide the dhal between 4 plates and top each one with a sea bass fillet. Serve sprinkled with toasted flaked almonds.

For grilled sea bass with garlicky spinach, cook 4 x 150 g (5 oz) sea bass fillets under a preheated hot grill for 3–4 minutes on each side until cooked through. Meanwhile, place 750 g (1¾ lb) spinach in a saucepan and pour over a little boiling water, cover and cook for 1–2 minutes until the leaves start to wilt, then drain.

Heat 1 tablespoon olive oil in a large frying pan and cook 3 tablespoons pine nuts and 2 chopped garlic cloves for 2–3 minutes, then stir in the wilted spinach. Divide between 4 plates and top with the sea bass fillets. Calories per serving 301

Ingredients:
600 g (1¼ lb) sweet potatoes, peeled and cut into wedges

Method:
Cook the sweet potatoes and fennel in a saucepan of boiling water for 4 minutes, then drain. Transfer to a roasting tin and sprinkle with the garlic, pepper, half the parsley and the olive oil. Toss together. Roast in a preheated oven, 220°C (425°F), Gas Mark 7, for 20–25 minutes until the vegetables are tender and golden.

Meanwhile, rub the remaining parsley and the mint into the scored salmon skin. Set aside.

Lay the salmon, skin side up, on top of the vegetables, sprinkle with the lemon rind and juice and roast for a further 15 minutes, or until the fish is cooked through and the vegetables are tender.

Sprinkle with the Parmesan shavings and serve with lemon wedges.

For fennel & salmon soup, heat 1 tablespoon olive oil in a pan, add 2 chopped shallots and fry for 2–3 minutes. Add 400 g (13 oz) new potatoes and 2 chopped fennel bulbs and cook for a further 3–4 minutes.

Pour in 900 ml (1½ pints) glutenfree vegetable stock and simmer for 10–12 minutes until the vegetables are tender.

Blend with a hand-hand blender, then return to the heat, season and drop in 400 g (13 oz) skinless salmon fillet, cut into chunks, and cook for 3–4 minutes until the fish is cooked through. Ladle into 4 bowls and serve sprinkled with chopped parsley. Calories per serving 325

Method:

Place the kale in a colander, then pour over boiling water to slightly wilt the kale. Refresh under cold running water and drain.

Cook the salmon fillets under a preheated hot grill for 3–4 minutes on each side, or until cooked through.

Meanwhile, toss the kale together with the cabbage, carrot, avocado and tomatoes in a serving bowl. Whisk together the remaining ingredients and pour over the salad.

Scatter the toasted seeds over the salad. Serve the salad with the salmon and sprinkle over a little pepper.

For Chinese-style kale with pan-fried tuna, heat 1 tablespoon sunflower oil in a wok and stir-fry 2 sliced garlic cloves for a few seconds, then add 200 g (7 oz) shredded kale. Toss around in the garlicky oil, then pour over 100 ml (3½ fl oz) boiling water and cook for 5–6 minutes until the kale has wilted. Meanwhile, heat 1 tablespoon olive oil in a separate frying pan and cook 4 x 150 g (5 oz) tuna steaks for 3–4 minutes on each side (depending on how rare you like your tuna). For Thai fish soup, mix together 1 litre (1¾ pints) gluten-free fish stock, 1½ tablespoons red Thai curry paste, 4 kaffir lime leaves and 1 tablespoon glutenfree fish sauce in a saucepan. Bring to a simmer and cook for 5 minutes, then add 300 g (10 oz) skinless white fish fillets, such as cod or haddock, and cook for 2 minutes. Stir in 150 g (5 oz) raw peeled king prawns, 3 pak choi, quartered, and a handful of coriander leaves and simmer for 2–3 minutes until the prawns turn pink and the fish is just cooked through. For hot & sour fish soup, place 850 ml (1½ pints) hot gluten-free fish stock, 1 teaspoon coriander seeds and 2.5 cm (1 inch) piece of fresh root ginger, peeled and sliced, in a saucepan and simmer for 5 minutes. Add 1 tablespoon gluten-free fish sauce, 2 thinly sliced red chillies and 3 thinly sliced garlic cloves and simmer for a further 2 minutes, then add 300 g (10 oz) raw peeled king prawns and 200 g (7 oz) skinless cod or haddock fillet, cut into pieces, and cook gently for 5–6 minutes until the prawns turn pink and the fish is cooked through. Meanwhile, cook the quinoa in a saucepan of boiling water according to the packet instructions, then drain and refresh under cold running water and drain again. Transfer to a bowl and stir in the remaining mint, the parsley, coriander and tomatoes.

Cook the kebabs under a preheated hot grill or on a barbecue for 10–12 minutes, turning frequently, until the fish is cooked through. Serve with the tabbouleh and lemon wedges.

For monkfish & mango salad, toss together 400 g (13 oz) monkfish, cut into chunks, 2 tablespoons olive oil and 1 tablespoon red Thai curry paste in a bowl and leave to marinate for 20 minutes. Meanwhile, toss together the leaves of 2 Little Gem lettuces, 1 peeled, stoned and sliced mango, ¼ sliced cucumber, a small bunch of chopped coriander and 3 sliced spring onions, then then transfer to a large serving plate.

Method:
Place the flour, egg, yogurt and measurement water in a blender or food processor and process to form a smooth batter. Pour into a bowl, then stir in the chilli, spring onions, coriander, sesame seeds and salt and pepper. Cover and chill for 20 minutes.

Heat a frying pan with a little of the oil and then wipe with kitchen paper. Add dessertspoonfuls of the mixture and cook for 1 minute on each side until lightly golden, then remove from the pan and keep warm. Repeat with the remaining batter.

Top each blini with a little dollop of crème fraîche, a piece of smoked salmon and a sprinkling of chopped chives and sprinkle with a little extra pepper.

For grilled sesame salmon, whisk together 2 tablespoons gluten-free soy sauce, 2 teaspoons clear honey, 2 teaspoons peeled and grated fresh root ginger, 1 tablespoon sesame oil and 2 crushed garlic cloves. Place 4 x 150 g (5 oz) salmon fillets in a shallow bowl and pour over the marinade.

Cover and leave to marinate in the refrigerator for 10–15 minutes. Cook the salmon fillets, skin side up, under a preheated grill for 5–6 minutes, then turn the fillets over, sprinkle with 2 tablespoons sesame seeds and cook for a further 3–4 minutes until golden and cooked through. For the salsa:
1⁄2 pineapple, skinned and cored (see technique, right)
1 red bell pepper, halved and seeded
1 red onion, finely chopped
1 jalapeño or other mild green chile, seeded (optional) and finely chopped
1 garlic clove, crushed
juice of 2 limes
handful of cilantro, finely chopped

Method:
1 For the salsa, chop the pineapple and pepper into small, similarsized chunks and put them in a bowl. Add the onion, jalapeño, garlic, lime juice, and cilantro, and stir to mix. Set aside.

2 Pour the melted butter into a wide, shallow bowl. In another wide, shallow bowl, mix the sea salt, garlic powder, black pepper, cayenne pepper, oregano, and thyme.

3 Heat a large, heavy-based frying pan over medium-high heat. When the pan is hot, dip the fish fillets in the melted butter, coating both sides well, then dip in the seasoning.

4 Cook the fillets for 2–3 minutes on each side, or until blackened. Serve hot, topped with the pineapple salsa.

Coring a Pineapple
1 With a sharp knife, cut off the top and the base. Stand it upright and cut along the contour of the flesh, removing the skin in strips from top to bottom.

2 Turn the pineapple sideways and cut it into slices of an even thickness. Use a round metal cutter to remove the hard, fibrous center of each ring.

2 Cut the potatoes lengthwise into wedges and toss them in a large bowl. with 1 tablespoon (15 ml) of oil; season with salt and pepper. Put the potatoes in a single layer on one of the pans. Rub the spice mix evenly over each side of the salmon fillets. Place them on the other pan; drizzle each portion with 1/2 teaspoon (2 ml) oil. Roast potatoes for 15 minutes, roast the salmon filets for 8–10 minutes, depending on their thickness.

3 While the fish is roasting, bring a saucepan of water to a boil. Add the beans and sugar snaps and cook over a medium–high heat for 2–3 minutes, or until just tender. Drain and season with pepper.

4 Serve the salmon with the potatoes, green beans and sugar snap peas.

Ingredients:
1 1/4 cups (280 g) mixed Asian greens, such as bok choy and Chinese cabbage, chopped
4 fish steaks, such as halibut or haddock, about 5 ounces (140 g) each
grated zest and juice of 1/2 small orange
3 tablespoons (45 ml) shredded fresh basil
2 garlic cloves, finely chopped
1/2 cup (125 ml) dry white wine
1 tablespoon (15 ml) olive oil
1/2 bulb fennel, very thinly sliced
1 carrot, cut into thin strips
freshly ground black pepper

Bulgur and herb pilaf:
1 cup (200 g) bulgur
1 tablespoon (15 ml) olive oil
juice of 1/2 lemon
1 garlic clove, finely chopped
2 tablespoons (30 ml) shredded fresh basil
2 tablespoons (30 ml) chopped fresh cilantro leaves
3 scallions, thinly sliced

Method:
1 Preheat the oven to 465°F (240°C). Cut four 12 inch (30 cm) squares of foil or parchment paper. Arrange one-quarter of the chopped Asian greens in the middle of each square. Top with a piece of fish and cover with orange zest and juice, basil, garlic, wine, oil, fennel and carrot. Season to taste with pepper. Fold the foil over to form a parcel, leaving a little air inside so the ingredients can steam; twist the edges to seal. Place the parcels on a baking sheet. Set aside.

2 To make the bulgur and herb pilaf, combine the bulgur with 33/4 cups (900 ml) water in a large saucepan and bring to a boil. Reduce heat to medium–low, cover and cook for 12–15 minutes, or until just tender. Drain the bulgur if necessary.

Ingredients:
4 sea bass fillets, 1 1/2 inches (3.5 cm) thick with skin on, about 5 ounces (150 g) each
3 cups (750 ml) homemade or low-sodium fish stock
1 cup (185 g) couscous
1 strip of lemon zest
1 1/2 cups (350 g) baby carrots
12 scallions, trimmed to about 4 inches (10 cm) long
1/2 pound (200 g) asparagus, trimmed and halved diagonally
2 tablespoons (30 ml) fresh parsley
freshly ground black pepper

Marinade:
1 teaspoon (5 ml) grated fresh ginger
1 tablespoon (15 ml) low-sodium soy sauce
1/2 teaspoon (2 ml) sesame oil
1 clove garlic, finely chopped
1 tablespoon (15 ml) dry sherry, dry white wine or vermouth

Method:
1 To make the marinade, combine the ginger, soy sauce, sesame oil, garlic and sherry in a large bowl. Add the fish and turn to coat in the marinade. Set aside.

2 Bring 1 cup (250 ml) of the stock to a boil in a saucepan that will accommodate a steamer basket. Put the couscous in a bowl and pour in the hot stock. Cover and let stand for about 15 minutes, or until the couscous has swelled and absorbed the liquid.

3 Pour the remaining stock into the saucepan. Add the lemon zest and bring to a boil. Add the carrots to the pan, and reduce the heat so the stock is simmering.

4 Place the fish, skin side down, in a single layer in a steamer basket. Add the scallions and asparagus (or put them in a second steamer basket, which will stack on top of the first). Place the steamer basket over the stock and cover. Steam for 10–12 minutes, or until the fish is opaque throughout and begins to flake, and the vegetables are tender.

5 When the couscous is ready, add the chopped parsley and fluff the grains with a fork to combine the couscous and parsley. Season to taste with pepper.

6 Remove the steamer basket from the pan. Drain the carrots, reserving the cooking stock. Divide the couscous among warm plates, and arrange the fish, carrots and steamed vegetables on top. Discard the lemon zest from the cooking stock. Moisten the fish, vegetables and couscous with a little of the stock, and serve with any remaining stock as a sauce.

1 bay leaf

2 large tuna steaks, 1 inch (2.5 cm) thick, about 1 pound (500 g) total
freshly ground black pepper
1/2 pound (250 g) tagliatelle

Anchovy and sesame topping:
2/3 cup (55 g) fresh whole-grain breadcrumbs
1 clove garlic
4 anchovy fillets, drained
1/3 cup (10 g) fresh parsley
2 tablespoons (30 ml) sesame seeds
2 teaspoons (10 ml) extra virgin olive oil

Method:
1 Preheat the oven to 400°F (200°C). Heat the oil in a frying pan or wide saucepan over a medium heat, and add the onion, peppers and garlic. Cover and cook, stirring frequently, for 3–4 minutes, or until the onion has softened. Stir in the tomatoes, tomato paste, bay leaf and chili paste. Cover the pan again and cook, stirring frequently, for about 7 minutes, or until the peppers are just tender.

2 Meanwhile, to make the anchovy and sesame topping, combine all the ingredients in a food processor and process until finely chopped. Alternatively, chop the breadcrumbs, garlic, anchovies and parsley together, put them in a bowl and mix in the sesame seeds and oil with a fork until well combined.

3 Transfer the pepper mixture to an ovenproof dish large enough to hold the fish in one layer. Season the tuna steaks with pepper and cut each one in half. Lay the four pieces of tuna in the dish and spoon over the topping to cover them evenly. Bake for 10 minutes, or until the fish is just cooked; it will still be a little pink in the center. If you prefer the tuna well done, cook for another 1–2 minutes.

4 Meanwhile, cook the pasta in a saucepan of boiling water for about 10 minutes, or until al dente. Drain and divide among four plates. To serve, top the pasta with some of the pepper mixture and a piece of tuna.

Ingredients:
500g/1lb 2oz potatoes, cubed

2 medium eggs
75g/3oz/1½ cups fresh white breadcrumbs

Method:
1 Cook the potatoes in a pan of boiling water for 15 minutes or until tender. Drain and mash with the butter.

2 Stir in the chopped hardboiled eggs, fish, spring onions and watercress. Set aside to cool for 15 minutes.

3 Beat the eggs in a shallow dish and tip the breadcrumbs on to a plate. Divide the fish mixture into eight portions and shape into patties. Dip them in the beaten egg to coat both sides and then into the breadcrumbs. Coat all over and place on a non-stick baking sheet. Cover and chill in the refrigerator for 1 hour to firm up.

4 Heat 2 tbsp oil in a large frying pan over a medium heat and cook the fish cakes for 5 minutes on each side or until golden brown, crisp and piping hot. Cool and freeze, or serve with crème fraîche flavoured with horseradish sauce.

Ingredients
150g/5oz/scant 1 cup Puy lentils
400ml/14fl oz/1¾ cups hot vegetable stock

4 Cut the salmon into large flakes or chunks and place in an ovenproof dish with the broccoli. Pour the egg and yogurt mixture over the top and sprinkle with the breadcrumbs and grated Cheddar.

5 Cook in the oven for 20 minutes or until bubbling, crisp and golden. Serve piping hot with steamed green vegetables.
