LEMON YOGURT POUND CAKE

Total Time Taken: 1 ¼ hours
Yield: 10 Servings

Ingredients:
¼ cup fresh lemon juice
¼ teaspoon salt
½ cup butter, melted
1 cup plain yogurt
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
2/3 cup white sugar
4 eggs

Directions:
1. Mix the flour, baking powder and salt in a container.

2. In a separate container, combine the butter, eggs, sugar, lemon
juice, vanilla and lemon zest. Stir in the yogurt and mix thoroughly.

3. Fold in the flour mixture then spoon the batter in a loaf pan covered
with parchment paper.

4. Pre-heat the oven and bake at 350F for forty minutes or until it rises
significantly and starts to appear golden-brown.

5. Let cool in the pan before you serve.
