CLEMENTINE BREAD

Total Time Taken: 1 ¼ hours
Yield: 10 Servings

Ingredients:
¼ cup canola oil
¼ teaspoon salt
½ cup heavy cream
1 egg
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
4 small clementines

Directions:
1. Put the clementines in a deep cooking pan and cover with water.
Cook until softened then drain and put in a blender.

2. Put in the cream, egg and oil, as well as vanilla into the blender and
pulse until thoroughly combined.

3. Stir in the flour, salt and baking powder then pour the batter in a
loaf pan coated with baking paper.

4. Pre-heat the oven and bake at 350F for forty minutes or until a
golden-brown colour is achieved and it rises significantly.

5. Let cool in the pan and serve, sliced.
