Ingredients:
1/2 chicken, cut into cooking pieces
MARINADE:
1/2 tbsp. garlic
3 tbsp. soy sauce
2 tbsp. calamansi juice
1/2 tbsp. cracked black peppercorn
2 tbsp. cooking oil
Method:
1. Marinate chicken for 1 hour.
2. Grill the chicken until cooked for approximately 20 minutes. Set aside.
Ingredients for Braising:
1 tsp. garlic, minced
1 tbsp. finely chopped shallots
1 pc. lemongrass bulb, bruised
1 tsp. whole black peppercorns
5 tbsp. vinegar
2 tbsp. ginger, chopped
2 tbsp. soy sauce
2 cups roasted coconut milk
2 pcs. unripe cooking bananas
1 slice langkawas or galanggal (optional)
Method:
1. Sauté garlic and shallots in a pan. Add lemongrass bulbs and chicken.
2. Add all ingredients together and braise until sauce is thick and creamy.
