Chili's Monterey Chicken
SERVES 1
Ingredients:
1 boneless, skinless chicken breast
Salt and pepper, to taste
2 teaspoons barbecue sauce
2 slices of well cooked bacon
¼ cup mixture Monterey jack and sharp Cheddar cheeses
2 slices diced tomatoes
1 teaspoon chopped chives
Method:
Pound the chicken breast until it is flattened. Season with salt and pepper.
Heat a skillet to medium-high heat and spray with nonstick cooking oil.
Cook the chicken for 4–5 minutes per side, or until done. Transfer the chicken to a microwave-safe serving plate.
Top the chicken breast with barbecue sauce, bacon, and cheeses.
Microwave for 1–2 minutes, until the cheese melts.
Sprinkle with tomatoes and chives.
