Bahama Breeze Vegetable Sauté
SERVES 4
Ingredients:
2 teaspoons extra-virgin olive oil
½ red bell pepper julienned
½ yellow bell pepper julienned
½ green bell pepper julienned
½ seeded and sliced chayote squash
1 stick sliced celery
1 large clove garlic minced
¼ cup chicken broth
8 sliced mushrooms
1 teaspoon chopped fresh thyme
¼ teaspoon white pepper
2 tablespoons dry white wine
½ teaspoon salt
Method:
Heat olive oil over high heat and sauté the vegetables for 3–4 minutes, stirring often.
Reduce heat to low and add the remaining ingredients.
Cook the vegetables, stirring often, for 2 more minutes.
