Applebee's Garlic and Peppercorn Fried Shrimp

SERVES 4

Ingredients:
1 pound (61–90) thawed shrimp
Vegetable oil, as needed
½ cup flour
¼ teaspoon salt
2 teaspoons divided fresh cracked black pepper
1 teaspoon garlic powder
½ teaspoon paprika
1 teaspoon sugar
2 eggs
1 cup bread crumbs

Method:
Clean and peel the shrimp. Leave the tails on.

Fill a fryer 2"–3" deep with oil and heat to 350°F.

In a bowl, combine the flour, salt, 1 teaspoon pepper, garlic powder, paprika, and sugar.

In another bowl, beat eggs slightly.

In a third bowl, mix the bread crumbs and 1 teaspoon pepper.

Coat the shrimp with flour mixture, then eggs, then bread crumb mixture, being careful to shake off excess

between steps and not overcoat.

Fry for 2–3 minutes, or until golden brown.
