Ginataang langka sa dilis
Ingredients:
1 tsp. garlic, minced
2 tbsp. oil
2 tbsp. shallots, sliced
1/2 cup dried dilis
1 cup langka, young, blanched with the
hard part trimmed
1 cup stock
2 1/2 tbsp. fish sauce
1/2 tsp. ginger, sliced into strips
3/4 cup coconut milk
2 pcs. finger chilies
1–2 pcs. bird’s eye chilies
Method:
1. Sauté garlic in oil and then add the shallots.
2. Add the dilis and langka.
3. Add stock and season with fish sauce. Add chilies.
4. When the stock is reduced to half, add the coconut milk and continue to simmer for a few more minutes to cook.
