Swedish style steak
Serves 4
Peel and boil 21⁄4lb (1kg) waxy potatoes for about 15 minutes. Drain, put in a bowl, and cover with cold water.
Cut 10oz (300g) sirloin steak into large chunks, then sear in a hot frying pan with a little olive oil. Set aside. Blend 2 sticks of butter with 5 crushed garlic cloves, and a handful of chopped fresh flat-leaf parsley. Season.
Cut the potatoes into thick slices, and layer in the bottom of a baking dish. Put the steak on top, cover with the butter, and roast in a preheated 400°F (200°C) oven for 20 minutes. Serve with a tomato salad.
