Melt 2 tablespoons butter in a pan over a low heat. Add 1 teaspoon of all-purpose flour. Cook, stirring, for a couple of minutes, then gradually add 1¼ cups milk, stirring constantly.
Add 1¾oz (50g) grated Gruyère cheese, scant 1oz (25g) grated parmesan cheese, and 1 teaspoon of coarse-grained mustard. Continue stirring until melted. Season.
Once cool, beat in 4 egg yolks. Beat 4 egg whites to soft peaks. Carefully fold the whites into the cheese mixture, a little at a time, until combined.
Divide the mixture among 4 ramekins, leaving space at the top, and bake in a preheated 400°F (200°C) oven for 12–15 minutes until risen. Serve immediately.
