Cheesy leeks on toast

Heat 1 tablespoon of olive oil in a saucepan over low heat. Add 1 chopped leek, and sauté gently until soft.
Remove, and set aside. Put 2 tablespoons butter, ⅔ cup beer (preferably brown ale), and 6oz (175g) grated sharp cheddar cheese in the same pan, and cook gently, stirring, until melted and smooth.
Remove from the heat, and stir in 1 tablespoon of flour until smooth, then return to the heat, stirring continuously.
Remove from the heat, stir in 2 teaspoons of mustard, a splash of Worcestershire sauce, and the reserved leeks. Season.
Allow to cool, then stir in 2 egg yolks until combined. Toast 4 slices of bread on one side, turn, then arrange on a baking sheet, and spread with the cheesy leeks. Broil for a few minutes, until bubbling and golden.
