How to make Griddled steak with peppery crust recipe

Ingredients:
black peppercorns
red peppercorns
green peppercorns
mustard seeds
caraway seeds
sea salt
brown sugar
red chillies

Method:
1 Process 1 teaspoon each of black peppercorns, red peppercorns, green peppercorns, mustard seeds, caraway seeds, and sea salt, 2 teaspoons brown sugar, and 2 seeded fresh red chillies into a grainy mixture.

2 Roll a 12oz (350g) piece of steak evenly in the mixture. Heat a ridged cast-iron grill pan until hot.

3 Cook the steak, turning only once, remove from the pan, and let rest on a warm plate for 10 minutes before serving.
