Seared steak with arugula

Season two 6oz (175g) sirloin steaks. Heat the grill pan, and cook the steaks over very high heat, one at a time, for 1 minute on each side. Remove and rest.
Arrange 7oz (200g) arugula on a serving plate, sprinkle with freshly shaved Parmesan cheese and cherry tomatoes, halved. Diagonally slice the steak and place on top of the salad with juices. Dress with an olive oil and balsamic vinegar dressing.
