Asian steak salad with bok choy

Slice 10oz (300g) sirloin steak into thin strips, and put in a bowl. Mix together 1 tablespoon vegetable oil, 1 tablespoon soy sauce, the juice of 1 lime, a 1in (2.5cm) piece of minced fresh root ginger, 2 crushed garlic cloves, and 1 teaspoon granulated sugar.
Pour over the steak, and marinate while you prepare the other ingredients. Spread 7oz (200g) bean sprouts over a platter. Quarter 1 head bok choy lengthwise, and sautĂ© with a little oil in a frying pan over medium heat for 3–4 minutes.
Remove from the pan, and arrange on top of the bean sprouts. Add the marinated steak to the same pan, increase the heat to high, and stir-fry for a few minutes until cooked.
Pour in the remaining marinade mixture along with 1 tablespoon rice wine vinegar, and cook vigorously for 1 minute. Pour the steak strips over the bean sprouts and bok choy, gently toss, and serve immediately.
