Rice balls filled with cheese

Serves 4

Generously season 8oz (225g) cold cooked arborio or other risotto rice, then roll into 12 even-sized balls.

Push a cube of mozzarella cheese into the center of each ball, then cover so that the cheese is enclosed.

Roll each ball in some beaten egg, then in some toasted fresh bread crumbs. Fry in a little olive oil over medium heat for 2–5 minutes until golden. Serve hot.
