Special equipment • ridged cast-iron grill pan or griddle
Serves 4
Cook two 41⁄2oz (125g) sirloin steaks to perfection on a hot grill pan. Let rest for 5 minutes, then slice into thick strips. Heat 1 tablespoon of olive oil in a frying pan over a medium heat. Add 6oz (175g) oyster mushrooms, and sautĂ© for 5 minutes. Toss with the steak strips. Whisk together 3 tablespoons of olive oil, 1 tablespoon of white wine vinegar, and 1 teaspoon of coarse-grain mustard. Drizzle the dressing over the salad, then stir in a handful of chopped curly parsley. Season, and serve with fresh crusty bread.
