Steak and vegetable parcels

In a frying pan over high heat, sear 8oz (225g) cubed sirloin or bottom round steak in a little olive oil for about 5 minutes.
Pour in ⅔ cup hot beef stock, and let bubble for a few minutes, then stir in 3 peeled, cubed, and cooked potatoes, and 3 diced and cooked carrots. Season. Roll out 12oz (350g) prepared pie crust to about ¼in (5mm) thick, then cut into 4 squares.
Divide the steak mixture evenly to the middle of each square. Sprinkle a handful of grated Cheddar cheese over each. Brush the edges of each square with a little water, then pull the corners up to the middle to make a parcel; pinch the edges of the pastry together to seal.
Brush each parcel with beaten egg yolk, and bake in a preheated 400°F (200°C) oven for about 20 minutes or until golden.
