Grilled Cod with Cucumbers and Ginger

Ingredients:
2 cups Cucumbers, English or hothouse, thinly sliced
1 cup Red onion, very thinly sliced
2 teaspoons Salt
3 tablespoons Pickled ginger, chopped
1 tablespoon Rice vinegar
3 tablespoons Green onion tops, chopped
3 tablespoons Vegetable oil
4 Cod fillets, boneless, skinless
To taste Salt and black pepper
Method:
Combine cucumbers and red onion and sprinkle with 11/2 teaspoons (8 g) of salt. Let stand 15 minutes; drain any liquid.
Combine the ginger, vinegar, and green onion tops with the cucumbers and red onions.
Add 2 tablespoons (1 ounce, 30 ml) oil; set aside.
Brush fish fillets with remaining oil and season both sides.
Grill fish skin side down to start, 3 minutes. Turn and finish cooking, 1 minute.
Transfer the fillets to warmed plates and serve with cucumber salad.
