Oven Roasted Potatoes

Ingredients:
3 cups Red Bliss potatoes
2 tablespoons Olive oil
1 Garlic clove, minced
1/2 teaspoon Rosemary or thyme, chopped
to taste Salt and black pepper
Method:
Preheat the oven to 375°F (190°C).
Wash and dry the potatoes. Cut a ring of skin from the middle of each potato, then cut the potatoes in half.
Combine the oil, garlic, and herbs with the potatoes in a roasting pan. Roast until tender, about 30 to 40 minutes.
