Cranberry Beans with Fresh Oregano

Ingredients:
2 1/2 pounds Cranberry (borlotti) beans (fresh) or
1 1/4 cups Cranberry beans (dried)
2 Bay leaves
3 Garlic cloves
1 1/4 teaspoons Salt
3 tablespoons Extra-virgin olive oil
1/2 teaspoon Black pepper
1 tablespoon Oregano, chopped
Method:
If using fresh beans, shell them and cover with 2 inches (5 cm) of water. Add bay leaves and garlic. If using dried beans, pick them over, discarding any misshapen beans or stones. Rinse well, and soak over night. Drain soaked beans and cover with water; add bay leaves and garlic.
Bring beans to a boil, reduce heat, and simmer gently, uncovered, until beans are tender, 30 minutes for fresh beans and 1 hour for dried.
Remove from heat and add 1 teaspoon (5 ml) salt. Stir well and let stand 10 minutes.
Drain beans. Discard bay leaves; mash garlic.
Stir in the olive oil, pepper, oregano, and garlic. Mix well. Best if served at once while still warm.
