Roasted Garlic Mayo

How to make Roasted Garlic Mayo Recipe - Roasting whole heads of garlic is an easy way to unlock a more nuanced flavor that comes as the sugars are caramelized.

Ingredients:
2 heads garlic
1 teaspoon olive oil
1 cup mayonnaise
1/2 teaspoon ground black pepper

Method:
Preheat the oven to 400 degrees F. Cut off the tops of the whole garlic, leaving the cloves exposed, but do not remove any skin. Drizzle 1/2 teaspoon olive oil on each whole garlic.

Wrap the garlic in aluminum foil and bake for 40 minutes. Remove and allow to cool. Unwrap garlic from the foil.

Remove the roasted cloves from the skin and mash. Mix with the mayonnaise and black pepper. Serve immediately or refrigerate up to one week. Makes about 1-1/2 cups
