Homemade Ketchup
How to make Homemade Ketchup Recipe - Ketchup doesn’t have to come from a bottle with a three-year shelf life. This simple recipe is a base from which to experiment by varying and adding ingredients. Paired with Oven Fries, you have a healthy delicious alternative to fast-food fries.
Ingredients:
2 pounds fresh ripe tomatoes, seeded and chopped
1/2 cup white vinegar
1/4 cup brown sugar
1 onion, chopped
1 clove garlic, minced
1-1/2 teaspoons salt
Optional ingredients:
1/4 teaspoon ground allspice
2 tablespoons chopped green chiles
2 tablespoons molasses
1 teaspoon cardamom
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon red pepper flakes
Method:
Combine all but optional ingredients in a saucepan and cook over medium heat until onions are soft, about 15 minutes. Purée in a blender until smooth. Return mixture to the saucepan and continue to cook until thickened, about 15 minutes more. Let cool and store in the refrigerator up to two weeks.
Try adding one of the optional ingredients or any other flavors you wish. Makes about 3 to 4 cups
