Spicy sausage, onion, and potato bake
Serves 4
Place 8–12 spicy sausages into a roasting pan along with 9oz (250g) baby new potatoes and 2 red onions, peeled and cut into eight wedges each.
Mix together 4 tablespoons coarse-grain mustard, 1 tablespoon red currant jelly, and 1 tablespoon olive oil. Add to the sausage mix, and combine well using your hands.
Sprinkle with chopped rosemary leaves, and season with sea salt and freshly ground black pepper. Roast in a preheated 400°F (200°C) oven for 30–40 minutes until golden. Serve immediately with a leafy salad.
