Salmon with dill and Madeira

Place four 5½oz (150g) salmon fillets skin-side down on a baking sheet, and season. Add a sprinkle of fresh dill.
Loosely cover with foil, and bake in a preheated 400°F (200°C) oven for 15 minutes until cooked. In a shallow pan, heat 2 tablespoons olive oil over low heat, and gently sauté 2 finely chopped shallots and 2 crushed garlic cloves for about 5 minutes.
Add a drizzle of madeira wine, increase the heat, and let bubble until reduced by half. Stir in a handful of chopped dill. Serve the salmon with boiled potatoes and green beans, with the dressing over the top.
