Bratwurst with sweet red onions
Serves 4
Peel and slice 3 red onions, and add to a large frying pan with a drizzle of olive oil. Sauté over low heat for about 5 minutes until soft, then sprinkle in 1 tablespoon demerara sugar.
Continue to cook over very low heat for about 20 minutes, stirring occasionally, until the onions begin to caramelize. Meanwhile, put 8 goodquality bratwurst in a roasting pan.
Drizzle with a little olive oil, and cook in a preheated 400°F (200°C) oven for 20–25 minutes, turning occasionally, until browned all over and the juices run clear. Serve the sweet onions and sausages in hot dog buns with a squirt of mustard.
