Meatballs with butternut squash
Serves 4
Combine 1lb 2oz (500g) ground beef, 1 finely chopped onion, 2 minced garlic cloves, and 1 egg. Season and form 12 even-sized balls, and chill. Peel, halve, and seed a butternut squash, and cut into chunks.
Place on a roasting pan with a little olive oil and sprinkle with hot red pepper flakes and sea salt.
Roast in a preheated 400°F (200°C) oven for 15–20 minutes, until golden. Meanwhile, cook the meatballs in a little olive oil over medium-high heat until browned. Transfer to the roasting pan with the squash, and roast for 10 minutes. Serve with chopped cilantro and a spoonful of tomato sauce.
