Salmon cakes

Mix 10oz (300g) cooked fresh salmon and 5½oz (150g) chopped smoked salmon in a bowl. Add 1 finely chopped onion, 2 crushed garlic cloves, 1 seeded and finely chopped hot red chile, 10oz (300g) cooked mashed potatoes, 1 tablespoon each of chopped tarragon and dill, and 2 beaten eggs.
Season, then use your hands to combine and mold into 2in (5cm) balls. Flatten into patties and evenly coat in toasted fresh bread crumbs.
Place the cakes in a roasting pan coated with vegetable oil, and roast in a prheated 400°F (200°C) oven for 20 minutes or until golden, turning once. Serve with a green salad.
