Peppered tuna with eggs
Serves 4
Place 4 eggs in a saucepan, cover with water, bring to a boil, and then simmer for 10 minutes. Meanwhile, roll a 9oz (250g) fresh tuna loin in some cracked black pepper.
In a pan over medium heat, sear tuna in a little hot olive oil for 3-4 minutes on each side. Remove tuna from pan, slice, and serve with a handful of pitted and sliced black olives, 10 anchovies in oil, drained, and the peeled and quartered eggs.
Arrange on a plate with arugula leaves, squeeze half a lemon over the dish, add a drizzle of extra virgin olive oil, and season to taste.
