Serves 2

Whisk together 4 eggs and 4 tablespoons milk, and season with salt and pepper. Melt 1 tablespoon butter in a deep-sided frying pan.

Once the butter is foaming, pour in the egg mixture, and stir with a wooden spoon or spatula over low heat until the eggs begin to scramble lightly. Add a pinch each of ground turmeric and garam masala, and stir.

They will continue to cook after being removed from the heat, so take them off when they are still creamy. Serve immediately with hot buttered multigrain toast and smoked salmon if you wish.
