Crispy bacon and avocado wraps
Serves 4
Fry 8oz (225g) thick bacon strips over medium-high heat until golden and crispy.
Use to fill 4 flour tortillas, along with a handful of romaine lettuce, shredded, and 1 ripe avocado, peeled, pitted, and cut into slices.
Squeeze the juice of 1 lemon and lots of freshly ground black pepper into 3–4 tablespoons mayonnaise, stir well, and use to top the bacon mix. Roll up the tortillas, and serve immediately.
