Serves 4
Wrap 8oz (225g) bacon strips around 4 thick haddock fillets, about 5½oz (150g) each.
Place the wrapped fish in a roasting pan, drizzle with a little olive oil, and throw in some sprigs of fresh rosemary.
Cook in a preheated 400°F (200°C) oven for 15–20 minutes until the fish is cooked and the bacon is golden and crispy. Serve immediately with minted peas or lima beans.
