Pancetta and potatoes with greens
Serves 4
Heat a large frying pan over medium-high heat. Add 1 tablespoon butter and 1 tablespoon olive oil, pour in 3 cubed cooked potatoes, and sauté for 5–10 minutes until golden and crispy, adding more oil if needed.
Season with salt and pepper. Push the potatoes to one side of the pan, add 6oz (175g) cubed pancetta, and cook until crispy.
Stir in 7oz (200g) lightly cooked shredded greens such as kale, and cook until wilted down and well combined. Season again if needed, and serve immediately with fresh crusty bread.
