Bacon, pear, and blue cheese salad
Serves 4
Whisk together 3 tablespoons extra virgin olive oil, 1 tablespoon white wine vinegar, and a pinch of sugar. Season with salt and pepper. Add 1¾oz (50g) crumbled blue cheese such as Stilton, and whisk together well until the dressing thickens.
Set aside. In a small frying pan, cook 8oz (225g) bacon strips for 5–9 minutes until crispy, then cut into small pieces.
Core and slice 3 ripe pears, and add to a shallow bowl with 2 handfuls of mixed salad greens and the bacon pieces. Crumble 1¾oz (50g) blue cheese over the salad, drizzle with the dressing, and serve immediately.
