Rice and Peas

Ingredients:
1/2 cup Kidney beans, dried
1 1/2 cups Coconut milk
1/2 cup Green onions, thinly sliced
1 Thyme sprig, chopped
1 Garlic clove, minced
1 1/4 cups Long-grain rice
1/2 teaspoon Salt
1/2 teaspoon Granulated sugar
Method:
Rinse the beans and cover with cold water. Soak overnight. Drain.
Combine the beans and coconut milk; simmer until beans are almost tender.
Add the green onions, thyme, garlic, rice, salt, and sugar.
Cook, covered, over medium heat for 15 minutes. Remove from heat and let stand, covered, for 5 to 10 minutes.
