Cauliflower with Curry

Ingredients:
4 cups Cauliflower, cut into 1-inch (2.5 cm) pieces
1/4 cup Olive oil
2 Garlic cloves, peeled
2 tablespoons Parsley, chopped
To taste Salt
1 tablespoon Curry powder
2 tablespoons Sherry vinegar
1/4 cup Chicken stock or vegetable stock
Method:
Steam or parboil the cauliflower until just tender.
Heat the oil over medium heat with the garlic until the garlic has turned light brown. Remove from heat. Keep the oil; mash the garlic with half the parsley and few pinches of salt.
Return pan to low heat and add the curry powder; cook 1 minute. Add the vinegar, stock, and garlic-parsley mixture.
Toss cauliflower in the curry mixture and serve.
