Fried Plantain Chips

Ingredients:
2 Green plantains
to taste Coarse salt
as needed Vegetable oil, for deep frying
Method:
Using a paring knife, score the plantain skin enough to barely go into the flesh from one end to the other.
Deep-fry at 325°F (163°C) until the slit on the side opens significantly.
Remove from oil and allow to cool enough to handle, then remove the peel.
Raise temperature of oil to 375°F (190°C).
Slice the plantains on a mandolin or electric slicer 1/8 inch (.3 cm) thick.
Fry the plantain chips for 2 to 3 minutes. Move them around in the fat for even cooking. Remove them to paper towels to drain. Season before serving.
