Tomato Basil Salad
Serves: 4:
Ingredients:
1/2 lb cherry tomatoes
1/3 cup basil, cut in small pieces
2 tbsp of a good balsamic vinegar
3 tbsp extra virgin olive oil
1 tsp Italian seasoning
2 or 3 cloves garlic, minced
Salt and pepper to taste
1/4 cup Parmesan, mozzarella, or feta cheese
Homemade Croutons (below)
Method:
Combine tomatoes and basil in a bowl.
In a jar with a lid, combine balsamic vinegar, extra virgin olive oil, Italian seasoning, minced garlic, salt, and pepper.
Shake jar vigorously and pour mixture onto tomato and basil. Add cheese and Homemade Croutons. Toss.
Note:
For full flavor of Parmesan do not shred, but cut or shave into pieces.
