Ricotta and Prosciutto Pies

How to make Ricotta and Prosciutto Pies Recipe

MAKES 12 PIES

Ingredients:
5 slices prosciutto
14 ounces fresh ricotta cheese
Leaves from 6 sprigs fresh thyme
1 bunch chives, chopped

Method:
Preheat the oven to 350°F. Cut the prosciutto into pieces and use it to line 12 mini muffin pan cups.

Stir together the ricotta, thyme, and chives, and season with sea salt and cracked pepper. Distribute the cheese evenly among the cups. Bake for 15 minutes, or until set.

Cool in the pan for 15 minutes before serving. Optional: Top each with a cherry tomato half, cut side down, before baking.
