Cucumber Ribbons and Shrimp

SERVES 6

Ingredients:
18 cooked large shrimp
1 large seedless cucumber
2 tablespoons Thai sweet chili sauce

Method:
Peel and devein the shrimp, leaving the tail intact, and rinse under cold running water.

Trim the ends from the cucumber and, using a vegetable peeler, peel long, thin ribbons.

Discard the seedy center core. Pleat a ribbon three or four times to form a ruffle, then on a toothpick, skewer 1 or 2 ribbons and 1 shrimp.

Skewer each and drizzle gently with sweet chili sauce. Serve immediately on its own, or on the Tasting Plate.
