Sugar Snap Peas
Ingredients:
4 cups Sugar snap peas
2 tablespoons Butter
to taste Salt and black pepper
Method:
Parboil the peas until almost tender in salt water. Drain and shock in ice water. Set aside.
Heat the butter in a sauté pan over medium heat. Add the peas and sauté until hot. Season with salt and pepper.
Chef Tips:
Sugar snap peas are a cross between traditional English peas and snow peas. Some fresh sugar snap peas are available stringless, which means they are ready to use
immediately after washing. Otherwise, snap off the end of each pea pod, pulling down the length of the pod to remove any tough strings.
